This friggin guy!! I tell ya. He might be trained as a professional chef and has years of experience working as a chef. But his ability to make you feel comfortable as a home cook is something that cannot be understated. Easy to learn watching his videos. Seriously thank you chef for being yourself. No act or gimmicks needed. Just pure humble cooking with a dash of professionalism!!

When my favorite Chef reaches 1mm subscribers (can’t understand why it hasn’t happened yet!) I just brought home a 4 pack of ribeye from Costco on Sunday Chef, I think I will salt the steaks tonight, and make this for my family tomorrow night. I love to make something REALLY DELICIOUS on Friday's and Sundays, so I ALWAYS make one of your recipes. This will make all of their stomachs very happy!!!

I love it! Put your steak in the pan and leave it alone! Don't touch it! Then the first thing you do is pick it up and look at it. Patience! You must wait for the Maillard Reaction!!!

Hi! 🌻❤ I absolutely adore you! ❤ Another dish I just MUST do! And, if I do just as you do, it is going to be perfect! Have made, following your way, Shepards pie, Beef Bourguignon, Beef Wellington, pickled onions, clarified butter, Fettucine Alfredo, Eggs Benedict, and a few more, ALL of them was PERFECT! My family's fave was Shepards pie! Had to make it several times... so many times, that I have started to add more vegetables... got grandkids that are fuzzy about vegetables, so I am a bit sneaky making the potato mash... yep, pure anything green (broccoli, peas, spinach..) and tell them that the green potato mash are rotten monkeybrain, and they are NOT allowed to eat it... of cause they are allowed to taste.... guess what, they demands to have more... 😁😁😁 Thank you for being here, you have made me love cooking! ❤❤❤

Keep the Shitake mushroom stems and dry them out, they make great fire-starter sticks. Especially good if you have a fireplace or wood stove.

I have never been a wine drinker so I never cooked with wine until Chef talked me into trying it. I have never tried a reduction, but I guess it is time to give it a go! Chef ups my game all over the kitchen!

It is completely different. I find most red wines too tannic but a wine reduction is not if you get a decent wine.

It's so simple and flavorful. Wine, butter, spices, shallots. All you have to make sure of is don't have the heat too high.

There are some good cooks online to check out but Chef Jean is without a doubt above the rest. His down to earth nature, talks and teaches us as we were right in the kitchen with him. If I stay too long I'll be here till midnight watching him cook.

There's never a misstep when learning from Chef Pierre! He's not only a pleasure to watch but but he educates you with humor and expertise. I have a freezer full of fresh beef, this recipe is simply superb and will be for supper. My housekeeper is a lovely person but she cannot cook. She is right here with me so am not talking behind her back, she knows its true. She has helped me cut up veggies after showing her your video on how to cut up veggies including mushrooms. Slow and steady wins the race.

Beautiful ... actually simply superb, dear Chef Jean-Pierre. After a tough day it's pure relaxation to watch you preparing a gorgeous dish. Frankly, it's also relaxing with just a simple "whatever". Hey Chef J-P. Want a suggestion for another video (you're gonna love it)? Budder! Compound butters like garlic, anchovy, cinnamon. How to make them and use them. How to cook with clarified butter (roast potatoes). How to store butter in the freezer and how to select the right one and when to add it to brown something. Some short recipes for appetizers (ameuse-guele). Explain lamination in a croissant; how to make a short bread.

Love this recipe!!! I would love to see you show a method for cooking a large tough cut of meat like eye round and getting it tender. Meat is becoming so expensive 😢

With cuts like that, low and slow is really the only option. If you try to bang out a quick meal like this with a cut like that, you're going to get some exercise for your jaw muscles...lol Get a slow cooker! There are a MILLION crock-pot recipes out there! Toss it together before bed, take it out of the fridge and throw it in the crock pot in the morning, boom...dinner is done when you get home from work!

The best way to tenderize a tough cut is baking soda! 1 tspn per pound is a good rule of thumb. I sprinkle it on both sides fresh out the fridge and let it sit about 30 minutes on the counter to get down to room temp or so, loosens up the muscle and the baking soda tenderizes it. Then I marinade it another 30 minutes before I pan seared. Pineapple also has enzymes that tenderize, add pineapple and teriyaki sauce as a marinade, that tenderizes as well, and goes well with beef!

I know low and slow is the key-but that answer is a bit oversimplified. How low? How long? Hoping maybe Chef JP has a good rule of thumb for how many minutes per pound. I also have a gas oven which means cooking times are a little different.

@@curveappeal8180 Nah...gas or electric doesn't matter much when it comes to the oven...get an oven thermometer and make sure temps are accurate and you're good to go! As for times, I can't stress enough, don't get hung up on cook times! People always ask, "how long should I cook _____?"...my answer? "Till it's done!" Not trying to be a dick but there is no way anyone could accurately answer that. Put it in, set a timer for 10-15 minutes and check it. TEMPERATURE dictates doneness...not time! Over time, you'll get a feel for your stove, your oven, etc. Keep at it!

The Wine, the alcohol is evaporated just leaving the taste and tenderizing the meat. Its wonderful!

I know the Chef gets complaints about repeating things, but I love it, and most people understand why he does. Not being a full time cook, I think it's good to keep hearing the lessons being taught. I can (and have) listen to him all day. A wonderful man!
