Hi, to me it makes a big difference on texture and quality of the crepes if placed in refrigerator overnight. It last longer in refrigerator keeping the same texture.

Hmm thanks for letting me know this can be made in a crepe pan.. I always thought it had to be steamed over water etc kinda like how Chinese make the steam prawn rice rolls. Wonder how the texture to this is… looks good though

Hi, the texture is similar but using the crepe pan makes the texture a bit dryer that’s all. Still yummy.

Can you tell me what is the benefit for step 2? I see a lot of recipe do step 2 but I also see a lot of recipe that don't do step 2 either. Thnx

Hi, Step 2 is using a method similar to Tangzhong which is a cooked gelatinous mixture of liquid and flour. This step helps make the crepes softer and stay fresh longer especially if left in the refrigerator overnight.

Hi, I did not. There’s oil in the batter so it doesn’t stick on the foil. If you find that it is sticking you can lightly brush the foil with oil.

Hi, I don’t. It’s not needed since the batter already has oil added.
Hi, make sure your using a nonstick pan/griddle. You can add a few tiny drops of vegetable oil on the pan then use a napkin to rub the oil around to pan so it’s very thinly coated with oil. Do this the first time and seldomly throughout making the crepe. Hopefully this helps.
