Cooking Mustard Grees: I love all types of greens and eat them several times a week. My favorite way of preparing the more flavorful (bitter) greens is to mix them with other milder greens. One way is to mix Turnip, Collard, and Mustard greens. Another way to prepare the more intense favored greens is to sauteed them with lots of sweet onion, fresh garlic, and Thai chili peppers. If really want to take them to next level season your greens with soy sauce instead of table salt. If you like bitter greens try mixing Dandelion greens with milder greens like Kale, I always remove the fibrous stem that runs the length of the leaves. Once the stem is remove, the greens will cook in matter of minutes. .

Dr. Liu, I do understand that almond skin in high in fiber (thus helpful). But what is your opinion on almond skin in high in lectins? (thus causing inflammation). What about almond skin being high in phytates & tannins which then depletes certain nutrients? (zinc & iron).
@peterpiper487
@peterpiper487 Күн бұрын
Yep... I have the same questions. As a doctor and nutritionist, I don't advise eating almond skins. However, I DO advise buying them that way and then soaking them and removing the skins before turning the almonds into almond milk because at this point, the skins are no longer needed for the purpose of protecting the nutrients inside the almonds. As for making almond flour in an industrial atmosphere, almond skins are typically removed through a process called blanching. This involves immersing almonds in hot water, which loosens the skins. The almonds are then either rubbed or mechanically processed to remove the skins. After removal, the skins are discarded, and the almonds are dried off completely. This is why I buy white almond flour in small quantities and use it for making keto recipes. I'd much rather do this than to ingest the skins, which, as you pointed out, are toxins.

She is a fan of almonds with skin, not just for the fiber but also for the phytonutrients and antioxidants, as she makes clear in this video. Obviously almonds WITH skin are a whole food. Personally, I’m a little suspicious of nutritional advice that guides us away from whole foods, although I may be proven wrong when the science is all settled, which I don’t think it is right now. Hence all the conflicting advice! So confusing.

Try my simple recipe using raw cranberries and nuts. Sort & rinse, then pulse in a food processor small amounts cranberries at a time. Remove to mixing bowl. Repeat till all cranberries are chopped. Do the same to about 1/4-1/3 volume of raw pecans (or almonds). Mix the fresh minced pecans and cranberries. Stir in zest & juice of small orange. Let sit for 1 hour. This resting time allows the pecans to neutralize the acidity of the cranberries SO THAT less sweetener is desired. Add to taste your choice of sweeteners. This keeps well in the frig and freezer.

Yes whould like your thoughts on lectins in foods if they have any negative impact on health
@skippy6462
@skippy6462 2 күн бұрын
You're correct that lectins, particularly those found in raw beans, can be harmful if consumed in large quantities, but the risks are generally eliminated with proper cooking. Here's a detailed explanation: What Are Lectins? Lectins are a type of protein found in many plant-based foods, especially legumes, grains, and some vegetables. They serve as a natural defense mechanism for plants against pests. Are Lectins Harmful? In their raw form, some lectins, such as those in raw kidney beans (phytohemagglutinins), can be toxic and cause symptoms like nausea, vomiting, and diarrhea. However, very few people consume raw beans or raw grains, so this is rarely a practical concern. How Are Lectins Deactivated? 1. Cooking: Heat destroys most lectins. Boiling beans for 10-30 minutes renders them safe to eat. Slow cookers, however, may not reach high enough temperatures, so pre-boiling is essential when using them. 2. Soaking: Soaking beans before cooking also helps reduce lectin content. 3. Fermentation and Sprouting: These processes can lower lectin levels in some foods, such as grains and seeds. Do Lectins Pose a Risk in Other Foods? Many foods that contain lectins-like tomatoes, potatoes, and whole grains-are safe and nutrient-dense when prepared properly. The "anti-lectin" trend in some diets (e.g., lectin-free diets) overstates their potential harm, as most lectins are harmless or beneficial in normal amounts after cooking. Bottom Line For the average person, lectins in cooked foods are not a concern. Instead of avoiding them, focus on proper preparation methods like soaking, boiling, or cooking.

This lady doesn’t know what she’s talking about. In the Indian culture for thousands of years it’s been known that you have to soak your almonds overnight or for several hours and then take the skins off and then you can eat them. If you don’t do that then you’re gonna have nutritional deficiencies and get sick. Even western medicine has caught on about this and seen that the skins have lectins in them and other Chemicals that don’t allow them to be absorbed.

2:15 “… per crypt”? What is that unit of measure? 🤔 UPDATE: I consulted ChatGPT and it says: “The term “crypt” in the context of your KZbin video likely refers to intestinal crypts (also known as crypts of Lieberkühn), which are specialized structures in the lining of the small intestine and colon.”

We've been told that we should soak nuts and seeds before eating. Sometimes this causes the skin to come off or we actually tae the skin off. What is your opinion on this?

So, I’m deathly allergic to celery. Don’t know if that’s if it matters that it’s American or Chinese. Green tea makes me vomit. Never tried macha. Don’t know if I want to as the reaction is quite severe. White tea I don’t have any problem with however. I actually know of an Asian market that is ten minutes away and combining purple sweet potatoes and frozen cranberries with chocolate sounds amazing. Thanks for the tip.

I'm living in the UK and it's really hard to sprout in the winter months even with the heating on. Would love a growing environment box thingy but have no idea what it's called or where to buy it.

Almonds are high in oxalates which can cause kidney stones. Also, their skin is high in lectins which wreak havoc on the digestive system. They must be soaked for several hours to reduce lectins or boiled.
@MrsSheffield

I’ve heard the same but there a lot of conflicting data… one study says this, another study says the opposite. I’ve never had kidney stones and eat almonds and things that have “lectins” and “oxalates”, same with people in MANY cultures who eat a lot almonds, or spinach etc…and they are not getting g kidneys stones like people in North America. So in my experiences, eat what works for your body.
