The newest, trendiest way to garnish a cake - the mirror glaze! In my step-by-step video tutorial, I'll show you how you can recreate this amazing finish at home. Find all the ingredients needed below in both grams and standard American measuring cups. This recipe makes a large batch of glaze, perfect for covering a large cake. This glaze can be used on most cakes, as long as the top and sides are smooth and free of bumps and lumps; otherwise, the glaze will not set smoothly.
YOU'LL NEED:
3 tablespoons (30g) unflavored gelatin
3/4 cup (180g) cold water
2/3 cup (210g) sweetened condensed milk
1 1/4 cups (300g) white granulated sugar
200ml (300g) light corn syrup
1 3/4 cup (300g) white chocolate
200ml (200g) water
concentrated gel food coloring
white food coloring
edible gold dust, optional

Hi! I recommend using a mousse cake or cover the cake in a buttercream frosting first and let it set in the refrigerator.

Thank you! This glaze recipe makes a large amount, it can easily cover 2, 8-inch cakes or one large cake. I don't recommend adjusting the sugar, I'm not sure how it would affect the recipe

I'm so happy you're enjoying my recipes and videos! Yes, you can use this one a buttercream cake. I recommend placing it into the freezer for about an hour so the glaze sticks to the surface better.

Try adding white food coloring, I find that it makes a huge difference. Also, I do 2 coats of the glaze. I find that one is typically not enough

That's a great question. I think both will work. This will also work great on mousse cakes and cheesecakes :)

That's a great question! You could use dark corn syrup but please keep in mind the glaze will have a yellow tint to it from the dark syrup.

You can save the leftover glaze in a closed container in the fridge, then reheat when ready to reuse. Yes, corn syrup and glucose are interchangable

Hey Tatyana, I'm thinking of doing your recipe of no-bake grape cheesecake and I came across this video of mirror glaze - looks magical! A question - when you refrigerate the mirror glaze, how much time does it have to be in the refrigerator because I don't really know when it gets to the right temperature and I want it to be accurate.. Hi! :) The glaze needs to cool down to about 85F. You can even let it stand at room temperature until it reaches that temp. It will be lukewarm to touch and be much thicker. If it looks too thin and runs off of a spoon like water, wait a bit longer!

I haven't tried this with agar but I'm sure it would work. The temperature would have to be higher though since agar sets very quickly.

I would use this over super smooth frosting. I'm not sure how it would stick to fondant... Ideally, it's perfect for mousse cakes.

The glaze should be fine in the fridge for a few weeks, although you'll need to reheat it to use it again

I don't think that would work well under the mirror glaze. You want the surface to be firm; I think the cream would melt from the warm glaze

It can stand out for a few hours. Just refrigerate the cake overnight first.

Once you glaze the cake, allow it to set in the refrigerator overnight. Once it's set, it will be stable for a few hours.

Yes, gelatin leaves will work great here, too. This is the conversion that I got online: 1 (0.25 oz.) envelope granulated gelatin = 1 tablespoon powdered gelatin = 3sheets leaf gelatin

First, allow the glaze to chill in the refrigerator, then you can use icing or chocolate ganache to add writing

Yes, gelatin sheets will also work. Look for the highest strength you can find, since powdered gelatin is very strong.

I recommend covering in butter cream, or if you're using a mousse cake, place it into the freezer for the outside to set

Yes! Just make sure to keep it covered in the fridge, then reheat in microwave. I recommend blending it again afterwards to make sure all the clumps are gone :)

What happens if you refirdgerate it overnight? Can you re-heat and use again?

Yes, you can definitely refrigerate the glaze, then reheat and use again :) If you don't want to add the white food coloring, that would be okay. It just makes the color that you add really pop and vibrant

Hmm, I've never tried over fondant but I'm sure it would work. Make sure to chill the cake, then pour the glaze over; it will stick better

I've always done it on a flat cake, although I've seen it poured over a shaped cake, too

What was the cake covered in? Was that buttercream? Can u use mirror glaze over a whipped cream covering?

The cake was covered in buttercream and I refrigerated it before adding the glaze. I honestly don't think whipped cream would work, the glaze and cream would slide off I think. The glaze is rather sticky and heavy...

Hmm, maybe if you chill/freeze the cake beforehand. That way the glaze won't melt the frosting..

Yes! You can store it in the fridge, then reheat when you need to use it again.

What is supposed to be the texture of the glaze after refrigerating it with the cake? Is it supposed to feel sticky or smooth? Thanks in advance :)

It will stay shiny and glossy, but it will be sticky to the touch. I recommend letting it set for a few hours in the refrigerator before cutting into the cake so the glaze is easier to cut through :)

I would definitely recommend doubling even tripling the batch. It's always good to have some extra, I typically pour over 2 coats

Yes! :) Just keep it covered and refrigerated, then microwave or set over water bath to melt. I also recommend blending it again after reheating to get rid of clumps

I recommend using a thermometer, but if you don't have one, it should be lukewarm to touch. You'll notice it getting thicker

Just scrape from the pan into the same container, cover and store in the refrigerator. You can reheat the glaze and blend it again

Yes, you can just place it back into the jar, cover, and keep refrigerated. Then reheat to reuse.
