370 degrees F is well above the boiling point of the water. And yet the resulting seitan is not spongy? So, is it a myth that high temperature makes seitan spongy?

This is the first time I've heard of "Consommé powder". Turns out it is just granulated clear soup (broth). But, looking for the ingredients, I found this: "In cooking, a consommé is a type of clear soup made from richly flavoured stock or broth that has been clarified, a process that uses egg whites to remove fat and sediment." So, it uses EGG WHITES! Not vegan. I guess there are other ways to make it, but one should be careful with it.

So I made this yesterday (first try) and it is AMAZING!!!! The flavor is full and rich and the texture is incredible. Will be taking this to the beach house this weekend and will be grilling it with BBQ sauce....I know my non-meat friends AND carnivore friends will be so amazed. nice vid. a good one! i wonder if it will be good to tie the meat in a cooking twine into somewhat a roll (like how chefs do it with real meat or in a porchetta) just to improve the shape and compactness. thanks a lot, i will definitely trying this recipe!
