I ran a small, in-home bakery with my wife a couple of years ago. We'd sell our baked goods at our local farmers' market, and we'd sell out of product every week. Unfortunately we couldn't quite turn it into a 'real' business, but watching this brought me back to making Hokkaido Milk Bread and Cinnamon Rolls every week during the holidays, and I remember those days fondly. We had next to no idea what we were doing, but after watching this it's funny to see you doing all the same things we did, right down to how you cut the rolls before the final rise. Former edible arrangement employee here. NEVER get chocolate covered strawberries from them..they will take the bruised or sometimes even Moldy strawberries and cover them in chocolate so you can't see whats wrong with them, you're better off getting them fresh and dipping them yourself

I used to work in a bakery, and one thing they taught me was to pull the dough back a little when you roll to really keep it tight. Its hard to explain over text but essentially, each time you roll the dough over itself tug it towards your chest gently and the center swirl comes out amazing

Physics tip for sticky dough: Most sticky doughs are non-newtonian dilatant fluids, or shear thickening fluids, which means that when force or stress is applied to them, they harden momentarily, making them less sticky. This means that if you are handling a sticky dough, you can slap it around in your hands, and it won't stick as easily, and your hands will stay cleaner. Also, if your dough is sticking to the counter-top, you can smack it a little, and it will come off easier.
