Miss Trang, I just discovered your videos, and already have cooked Vietnamese doughnuts, absolutely love it!! These sticky balls , I buy them all the time from the Vietnamese store, and now I know how to make them, thanks to you! Love me some pho, bahn mi, and many other Vietnamese dishes. Thaw to room temperature. You can warm-up the dumplings in hot water, in a steamer or in the microwave.

Once frozen, thaw the dumplings to room temperature. Then heat in the microwave using on Low power for 45 seconds-1 minute to warm again. Alternatively, boil or steam for 2-3 minutes.

many times my dumplings made with (glutinous or plain) rice flour retain a raw starchy taste after cooking. How can I eliminate that "flavor?" Could it be due to old "expired" rice flour (there's no date on the packaging)? Maybe I need to cook them longer? It doesn't matter what recipes: dumplings, cakes, etc., there's always that raw, starchy taste. Just very desperate to find a way to neutralize or eliminate it (or what is causing it).

Hmm...a strong starchy taste typically means it's under-cooked but expired flour could be the culprit as well. Have you tried switching brands?

it's hard to describe but the taste of starch or raw flour is noticeable. I've tried increasing cooking time, but it's not always possible, like steaming dumplings. If you steam the dumplings for too long and the dough skin breaks or falls apart. I'll have to look for different brands, but usually only see one brand from Thailand in the store. Again, the packaging doesn't have any expiration date listed, so....

It might be Erawan - it has a picture of an Elephant on the clear plastic package. Which brand do you use? Maybe I can seek that one out or purchase it through Amazon.

I've heard that some people like to use the Mochiko brand, it's made in the USA. Also I've heard from others that they cover the flour with water overnight and pour out that water for recipes like banh cuon.

Aww...they're too cute to eat! I love how you cook and present the food at the end. So aesthetically appealing in all you do! BTW, are you familiar with Sonny from the Best Ever Food Review Show? He has amazing videos on Vietnam - super entertaining and so funny. His videos on the Mekong Delta are so great. I love his frog video, the one labeled "This river is FULL of food", the electric fishing one, the eating in Hoi An one, cow intestines one...you get the picture. He also does more serious videos like the illegal floating market one and an amazing video called The Hidden Vietnam. You should totally check his channel out if you are not familiar. :)

Hi em, freeze the dumplings for up to 3 months. Use the trick I shared in the video for freezing so they don't stick together. You can also wrap them individually and freeze. Good Luck!

Hi Thuy Le, em dùng giấy nến bỏ lên cái khay rồi em bỏ từng cái bánh ít trần đã luộc chín rồi lên khay đó, rồi em bỏ 1 lớp giấy nến ở trên rồi bọc lại với giấy bóng kính, bỏ vào ngăn đá khoảng 2 tếng rồi lấy ra bỏ vào túi ziploc rồi cất vào ngăn đá, để được 3 tháng.
