Today’s recipe is for maneuljjong-bokkeum (마늘쫑볶음), stir fried garlic scapes, which is how I usually prepare my garlic scapes. It’s sweet, chewy, crispy, and salty, and when garlic scapes are stir fried like this with a bit of mulyeot they take on a wonderful texture, which is kind of soft and jelly-like but still crispy. It’s hard to describe! Can you imagine?

My mom grows garlic in her garden. I didn't know you can eat the garlic stems. Now I will tell my mom to pick them and save them. I will try to make this dish. Looks so yummy.

This is great information for me. I grow a lot of garlic and never knew what to do with the scapes from the hardneck varieties. I heard you could use them raw to make a "garlic scape pesto". I tried that and it was terrible. Now I see how I can cook them to make a very delicious dish. My garlic should be sending up scapes soon, so I will try this method of cooking them. A million thanks! Now I will eat my scapes instead of sending them to the compost pile!

My scapes just came up and it's my first time growing garlic! I didn't realize you could eat these so I ignored. I'm probably going to suit and cook it this way!

scapes are a delicacy! they're cooked similar to green beans but with garlic flavor :)

This is so odd, how the universe works sometimes. I went to a farm yesterday with my daughter to pick up apples/veggies. I came across this garlic scapes I bought it just to see what I could do with it, and today when I open my youtube, this recipe came across like if I have just place the order to the universe! Thank you I will try it!

I love sooo many of your recipies. The only thing that makes me sad, is that most of the ingredients are hard to find for me, since I live in a very small town in Sweden, with few asian or korean stores. The few we have, have very little in the way of fresh products, mostly since everything has to be imported/transported a very long way. So I watch and dream instead, haha! ^^

I was so happy to one day see these at my supermarket! ( We live in Canada ) I bought them just to try this recipe and it was sooo fantastic! I added some thinly sliced beef to the stir fry to make it more suitable for my hubby. Even our wee kids loved it. I'm stocking up on the garlic scapes while in season. Thank you Maangchi for another delicious meal idea ; I would have never tried these if it weren't for you!

i grow purple hardneck garlics and look forward to scapes every year, theyre like garlic flavor green beans. harvesting them is difficult because if youre late they turn into tiny garlic seeds that look like mini garlic cloves in the form of a flower on the plant. we eat the tiny garlic cloves that sprout out of the older scapes and they are so good too :}

I love this vegetable. My grandmother used to cook it often but she would peel the outer layer off every stem before cooking them with oyster sauce. Delicious! Really sweet and tasty.

when I lived in my home country Ukraine, we always made dishes with garlic stems. My parents prepared it with similar to "creamy green beans" recipe. We served it with polenta. Thanks for another great recipe!!!

Ohni, this is sooo good. I love 마늘쫑볶음. I usually stem it in boiling water for a minute, then shock it in ice water, before I stir fry. Now i'm going to try this method today after work. I also use 마늘쫑 in my salad. sometimes I make cut carrots, zucchini, cucumber, garlic stems with Samjang sauce as dipping...yummy yummy

Love this dish. First time I tried it in Beijing and I went back to Hawaii and couldn't find it in the stores. I went to a specialty store and found it once! Now that I'm in FL I'm going to look at the Asian markets here as there are more Korean markets here than in Hawaii - so I'm hoping to find it again. Your dishes are easy to follow and I look forward to each episode, I think I love Korean food more than Chinese as the US Korean restaurants are more "true" to their origin than the Chinese are, at least in mainland US - the Chinese restaurants in Hawaii are more Cantonese but have a Hawaii twist. thanks again!

I made this yesterday, replacing the rice syrup with a little bit of kecap manis (sweet soy sauce) and it was so delicious! I really love the sweet, fragrant, non-pungent garlicy flavor. Thank you for sharing this recipe, Maangchi :)

I grow garlic myself at home. This year I will plant my garlic at the start of the planting season in autumn so that next year I can harvest some nice stems for this side dish! I'm sure it will be extra-tasty with all the love put into the garlic as it grows!

so happy to see this ...my friend gave me a whole bunch of these and I cleaned and saved the bottom parts and composted the upper half they looked just like what you just cooked...Sad face...if only I would've of known...but I do now...and in the future I will be making this....smiles!
