Come cook with Annie! Today we'll share with you two easy recipes for making dinner out of your prepping pantry. These are two staples in our house: Tomato Veggie Soup and Chicken and Rice. These recipes are quick and easy and can give you a delicious meal in a pinch.
Veggie Soup Recipe:
64 ounces tomato juice
32 ounces mixed veggies (canned, frozen or fresh)
4 potatoes
Fresh or frozen cabbage (to taste)
Salt and pepper (to taste)
Crushed red pepper (to taste)
Chicken and Rice Recipe
2 cans cream of chicken soup
1 can filled with water
32 ounces cooked shredded chicken (or fresh/frozen chicken, cooked)
2 cups instant rice, uncooked
2 tablespoons butter
Salt and pepper to taste
Place butter into a pan. Add cream of chicken soup and water. Combine and bring to simmer. Add instant rice. Stir and bring back to a gentle simmer again. Turn heat off, stir in cooked chicken, salt, and pepper. Bake at 350 degrees for 30 minutes. Enjoy!

Not sure if you know this already but if you run out of cream of chicken soup.. you can make a homemade version using chicken stock, flour, milk and seasoning.. takes only 5 minutes 😊

You could make cream of anything too! Just google for the recipes. Some ask for corn starch, substitute in arrowroot powder and you have a cream soup without the commercial poisons.

Every house we have lived in has a small dot of tomato sauce on the ceiling above the stove because I always forget to keep it low heat LOL

Thank you so much! I love when we can just grab from the pantry and whip up supper. Yesterday, Valentine's day, I was feeling under the weather. I grabbed 3 chicken boneless breasts, 2 cans pineapple chunks and apple cider. Poached the chicken in the cider, made a sauce with the pineapple juice and brown sugar. Served over instant rice. Started when Mark called said he was on his way home from work. I was serving it up when he walked in the door. Start to finish 20 minutes! And only one skillet and our plates to wash 🙂 keep the great videos coming 💜

Mom always substituted V-8 for tomato juice in these type of recipes. She believed the variety of the vegetables meant a better variety of vitamins. Does it really? I dunno. It tastes GOOD. And I'm old enough to be able to do what Mom did without threat to my independence. Never thought of cabbage. Definitely on my list of things to try sooner rather than later.

You can easily blanch and dehydrate cabbage. Last a long time. It not taking up room in jar or freezer. This is what i do.

I dehydrate my cabbage after shredding then I vac seal them …I also cook some chunked cabbage in chicken broth and freeze it in portions then when warming I add butter and seasonings. Stuffed cabbage soup is also great whether canned or frozen, pour over mashed potatoes or rice for a hearty meal. Sometimes I add lentils for protein, celery, onions, tomatoes, cabbage and dehydrated greens. My husband doesn’t like kale or spinach so I dehydrate those along with the stems and leaves of cauliflower, broccoli and celery leaves, carrot tops etc. Yep they are editable…

we shred and slice some brussel sprouts and add to the veggie soup as well dehydrated veggies are so good for soup and require less storage space love the recipes ty for sharing

I never thought about freezing cabbage like that but have been freezing my kale this year. I chop it up before I throw it in the freezer bags. Just like you- no blanching or anything. Throw in soups and casseroles or eggs as needed. And here in the cul de sac I bang frozen goods on the floor too, haha. Also any cream soup is just a white sauce aka white gravy with whatever flavor it would take to make the type of cream soup you want it to be thrown in. So want cream of mushroom? Throw the chopped mushrooms and the liquid from the can in. Want cream of celery? Save the tops that you normally chop off and save them in the freezer the later you chop them up and cook them down into the white sauce for cream of celery. Every cream of something is literally just leftover stuff thrown into white gravy.

You mentioned you and your family like spicy foods. This is a recipe I got in college in the 1970’s and used it a lot when we lived in New Mexico. You can adjust the heat as much as you want or need to do. This casserole freezes well. I usually make two and freeze one. It is quicker because you layer it like lasagna instead of rolling up each tortilla. And your canned chicken will work great. Totally yummy!! Nola's Layered Chicken Enchiladas Cook in oil until meat is cooked and vegetables are tender: 4 C. chicken chunks 1 bell pepper, chopped 1 onion, chopped 1 can green chilies Combine in a bowl: 2 cans cream of chicken soup 1 can evaporated milk In a 9”X13” pan, make repeated layers using 1 dozen tortillas, 1/2 to 1 lb. grated cheese and the meat and cream. End with cheese. Make ahead and refrigerate overnight, if possible. This also freezes well before baking. Bake at 350 for 45 minutes. You will need more time, if the pan has been refrigerated.

Great soup! I use original V8 for the base. Make a great big batch in a 28 qt pot.Eat from it for 2 days and then can up the rest. I also can up the potatoes and steam the chopped cabbage and freeze it. It all takes 5 minutes to put together. When can I come for dinner.LOL.

I've used her recipe and it turned out really well but I feel like it should have had a little bit more acid to be safe. I'm using it but I'm cooking it at least 10 minutes to make sure. I will definitely can it again but I'll add more vinegar or lemon juice next time. I think she only called for 2 teaspoons per quart and I don't think that's enough.

I tried raw packing chicken without any added liquid last year and the flavor and texture was so much better than canning already cooked chicken. You should try putting up raw packed and taste the difference. The smell of the chicken when you open the jar is unbelievable and the taste is so much fresher. I use a jar of diced tomatoes when making vegetable soup instead of using juice. I also sauté an onion and some celery in a bit of butter before adding the mixed vegetables, fresh potatoes and the tomatoes. That little bit of butter adds a richness to the soup. Soup is such a great way to stretch your main dish for your meal. It tames the appetite so you won’t fill up on a larger portion of the protein in your main dish. A nice cup or bowl of a hearty soup and a sandwich for lunch or dinner is so filling and satisfying. Growing up we ate tuna fish sandwiches with vegetable soup and grilled cheese with tomato soup. Our favorite chicken and rice dish has a cheddar and cream cheese sauce instead of the cream of chicken soup because I needed it to be gluten free. I also add cooked broccoli to the mixture.

I prefer raw packing over cooked chicken for the same reasons you mentioned and also like to add broccoli or cauliflower to the casserole and then top it with some cheese. I do add sour cream to the sauce before cooking to give it a nice tang.

Thank you for this information! I'm not a fan of canned chicken from the grocery store and I've been wondering if home canned chicken tastes better or not, and thanks to you, now I know that the raw pack does taste better! It's time gather my courage to use my pressure canner for the first time.😁

@@heatherj3030 it is so much better than store bought canned chicken! Don’t add any liquid to the jars or any seasonings when you can it. Just put the cut up pieces of chicken in the jars, wipe the rim, put the lid and ring on and process it. It will amaze you how much natural liquid will be in the jars after they are processed. As that liquid cools you will get a layer of fat that will congeal in the jars. That’s perfectly fine and you can use that in whatever you make with that canned chicken. When you open a jar to use, scoop that fat out and use it to sauté the vegetables or whatever (like rice) for your recipes. Check out the channel Suttons Daze here on KZbin for help with canning. Leisa is amazing at canning and using what she puts up. Don’t be afraid of pressure canning! It’s scary the first time, but once you get that first batch processed you’ll wonder why you were so afraid to try it.

Funny story. Made the crusty bread and I burned the it. The parchment paper cooked to the bottom. Will try again and yes I don’t cook much but I’m trying to learn.

Try using V8 juice for your soup. It adds more nutrients and flavor. We make my Dad's recipe veggie beef with it. It's a family favorite!

I use dehydrated cabbage when I make soup, just throw it in and it rehydrates perfectly. Never thought of using tomato juice for soup- have to get some, because that looks good.

I am a hunter. I would love to learn to can venison. It would save on freezer space. When I have venison from the previous year, I make homemade summer sausage, kielbasa, and our own recipe breakfast sausage.

I am not a fan of plastic but I have seen people wrap their cabbage in plastic wrap and supposedly it helps them to keep the proper moisture for long term storage in the root seller.

Kim you can make an easy gluten free cream of chicken soup by combining either chicken broth/stock or chicken bouillon with water to equal chicken broth/stock and just thicken it with glutinous white rice flour also known as Sweet Rice Flour. Bring the stock or bouillon and water to a boil in a pot. Once it’s boiling lower the temperature to medium and sift in a few tablespoons up to a 1/4 cup of sweet rice flour depending on the amount of stock you started with. Whisk the broth/stock while adding the flour or it will clump. Continue to simmer until it thickens to the consistency that you desire. Season to taste with salt, pepper and any other seasonings that you like. It’s really that simple.

I can cabbage in pints and love it! Chopped cabbage, add 1 tsp of canning salt, sugar and vinegar, top jars with boiling water, waterbath for 20 minutes. I use it as ingredient to recipes, but very tasty to just eat out of the jar. I'm not a saurkraut fan. This is not like that.

Are the canned veggies just frozen mixed vegetables? I'm curious on pressure used and canning time. I would love the convience of shelf stable over frozen!

Yes! They were frozen mixed veggies from the store that we pressure canned. Check out what Ball recommends for times! 😊

How does that chicken taste/texture beings that it was precooked then canned? I have raw packed and it shreds…but if you parboil it heard that it won’t shred. Great video thank you!!!

Yes, I blanched the cabbage before I froze it. But I don't usually blanch the potatoes.
