Save the tomato skins and dehydrate them. Once they're dehydrated, grind them into powder. It's great to thicken sauces/ soups or you can add a bunch of water and have tomato sauce.

Invest in a pasta roller for your kitchen aid. You will thank me. I have 2 of the hand crank ones, but the attachment for your kitchen aid is the berries. I make several hundred dozen ravioli a year. Saves on the carpal tunnel.

Loved the video - my first but definitely not my last. I've never used a pasta roller! I was taught as a child how to make egg noodles by hand and I continue at age 68 to do it the same! I also make bread from scratch - both kneaded and your method. It was interesting back in March/April 2020 when food was flying off the shelves! People bought out the pasta and pasta sauces but left me the canned tomatoes! I believe that if we know how to cook at least mostly from scratch, empty shelves won't panic us!

When I was a girl, my mom made white wedding cakes with only egg whites. She would take all the yolks and make a huge batch of noodles. Wonderful with chicken broth/soup. My favorite comfort food when tummy wonky.

You can make the pasta machine easier to use if installed correctly. The horizontal bar on the clamp goes into the hole on the crank side of the machine. That way it will clamp down to the workspace and not move around as it does in the video.
