AMAZING recipe. I didnt have stawberries but the Rhubarb alone did just fine. I also used 1/2 cup cane sugar instead of a cup for the Rhubarb mixture. Loved it sooooo tasty!!!!!! Big win!!!! Oh, I also pre-softened the rhubarb before hand, so it just melted in the bars (about 5 min in med. heat on stove). This was a perfect solution of what to do with the softened rhubarb after making rhubarb syrup for pancakes. Thank you!!!

Okay, call me crazy, but I think I'm in the same boat as you and I spent a long time looking for the recipe. I used to get rhubarb bars from Roy Street Cafe. I'm pretty sure that they were supplied by Parisian Star/The Essential Baking Company, and recently found them at Urban Coffee Lounge and PCC. If you want these to taste a little bit closer to Parisian Star's bars, I think you can add a bit of cinnamon and the smallest amount of vanilla extract. It will have a slightly more coffee-cake like taste which I think is great, but I think the original recipe here is also awesome - I've made them twice this summer!

Thanks! Yes, they can be frozen. Just make sure it’s cooled completely so there’s no condensation. From experience, the frozen ones tend to get soggy after defrosting, but still delicious!

Yes you can, in an air right container or wrap in parchment paper or foil and put in a freezer bag. ☺️

You used more alkaline ingredients.... especially white refined sugar.. thats a big NONO...
