I've tried this souffle many times here in Korea, mostly in coffee shops. It is very fluffy and goes great with syrup. However, since it's so thick, the middle is pretty much uncooked and tastes just like the egg white after mixing into foam, which is the main ingredient for its fluffiness. So you'd pretty much be full after just one, not because of the size but because you'd be bloated 😂 That's why my husband likes to call it the "uncooked pancake"

PikaLu! That one’s in Korea, but Japan made it first I think. A cafe near my house does it too (in Korea), but you can make it if you have the cream fluffing whirring thing. Just look up “soufflé pancake recipe”.

Every chef I watch says to delicately fold the meringue into the batter. This guy stirs like a madman and still gets fluffy cakes. Imma try his way next time.

You stir delicately to secure a stable, high rise. The pancakes didn’t rise much, so being delicate here isn’t important. But NEVER roughly mix for an actual soufflé, unless you want to be disappointed.

@@algrina04 It didn't rise dramatically like a a proper soufflé would with controlled folding. Egg whites have to be delicately folded so that they don't lose air. If you look closely at the video (1:43) and (2:40), you'll only see a slight rise from the original portion. I am a baker, which is why I brought that up. Had the baker mixed it more delicately, it would have most likely risen more. Try both methods and see for yourself. The best cooking comes from experimentation!
