Same recipe here in the philippines. That is how we make our oyster cake too. I agree that its better to use smaller oysters and sweet potato flour is a must. The only difference is instead of scallions, we use chinese chives and we add beansprouts. Also, we add ginger to the frying oil to get rid of any fishy taste from the oysters. To eat the oyster cake, we use hot sauce as dippping sauce and followed with pickled radish. Great as beer chow

Hi, I saw your short video on Pigs Liver. I disagree, it DOES NOT look disgusting at all. Four of my favourite dishes are Beef heart, Breaded liver, Steak and Kidney pie, and Tripe [Italian Style]. I can't indulge as I used to [Cholesterol] but that doesn't mean I love them any less. Virtually every culture has Dishes involving organ meats. Hagis, Pate de foie gras, Prairie Oysters, Tongue, Sweetbreads. It's ALL meat, and each cut has a unique and delicious flavour. The livers you chose were BEAUTIFUL. Nice rich even dark colour, Silky smooth texture, no fatty deposits and the resulting dish looked mouth watering. The organ meats get a VERY bad rap but it's completely undeserved.

Hi, I'm watching this from UK (England). I have tried some of your other recipes and have loved them. Unfortunately I can't find Chinese cooking wine. Does it maybe have a different name, or an alternative I can use, like maybe Mirin?
@FrostedCreations
@FrostedCreations Жыл бұрын
I'm from England too and have also stuggled to find it, I find it's normally labelled "rice wine for cooking" or just "rice wine". I don't speak Chinese but I think it's called "Mijiu" or "Michiu" properly. For most Chinese recipes you can use sake or shaoxing, although shaoxing has a stronger flavour so for recipes that use a lot of it it will taste off. Mirin will NOT work, as it is too sweet, sake would be the best replacement as they're both clear rice wines.

@@FrostedCreations thank you so much for such clear explanation. I cooked Chinese for the first time a couple of weeks ago using a recipe from from this channel. Now there's no going back 😂. Basically saying that I'm an absolute newby to Chinese cooking.

@@nillybetty7599 Getting the right ingredients is definitely the hardest part! I've spent lots years learning about Chinese food and I still find ingredients confusing sometimes, especially as a lot of things look veeery similar and different brands translate things differently. Plus videos often use US english and the UK english translation is sometimes different. I have bought the wrong thing by accident many times, but it's all well worth the effort!

Hello Mandy! I don't really understand what sort of oyster I must buy. Here in France I have never seen any. And I don't really understand the meaning of shuked oysters. It's not smoky oister? Shucked oysters are oysters that have been shelled. They should be small ones preferably. They can be bought at Asian markets frozen. Just defrost and use as directed. Or you could use shrimps, or fish fillet like salmon, cod, ling, or pollock cut into 2 cm square cubes.
