Hey! Great episode. I recently moved to Texas and I’ve been frequenting the BBQ spots. Franklin is definitely the best brisket to me, but man you need to try the beef ribs at La BBQ. Put it on your list for next time :) cheers

I'm about an hour from Austin and 3 hours from Dallas. I can't believe I've never been to a Terry Blacks. You can bet that will change the first chance I get!! That charred crusty outside is called the bark and we love it so much and everyone always asks for it, that a lot of BBQ places started taking some of their brisket and chopping it up putting it back in the smoker to get it charred up and it's called burnt ends. I'm surprised they didn't give you dill pickle slices what we call hamburger chips and raw onion. The dill pickle is really essential to have that vinegar to help break through the richness of the beef.
