You are one of the only authentic Italian cooking channels around. This is how my mother makes them. The thing is old chefs who have been doing this forever don’t always know how to explain all the steps, they just hope you make it with them and observe lol Your explanation of how to prepare the dough is nothing short of magnificent. These look wonderful! I’ve never seen the dough made with just flour and eggs. I’m going to try it this way next time. I was close to my aunts growing up and have a lot of their recipes which I continue to make in honor of them and to pass down to my children and grandchildren.

Me neither. We add anisette+, & the dough is more sticky. There are other "secrets", but my mother made me swear never to give out the recipe. Lol.

Hi Susan, They’re commonly called honey balls. Even in Italy every region has their own name for them. In Napoli we call the struffoli. This is my aunt’s recipe and my favorite. I make a few different ones. Thank you always for watching. 🥰🥰

Hi ,I am a new subscriber from Perth Western Australia. Thank you so much for sharing. My Dear Mum would make this and would do the same and say the same thing, cut to see the bubbles. I am so happy to see this. You have giving me many beautiful memories I also hear my Mum and Dad telling me the same thing. Alessandra, may I share something crazy that happened? I decided to do my Struffoli tonight. I watched your video several times and was ready to go! Everything measured out and ready, I put my 7 warmed eggs in a bowl and all the other things. OK., so I made the pile of flour on the counter but I don't have a nice granite one like you. Just an ordinary counter so I used my glass rectangle that I use as a good surface. I made the well in the middle of the flour and in went the eggs. Ok so I needed the fork which was below in the drawer. As I get out the fork, I see the egg closest to me in the well start to make a path OUT of the well toward me and the edge of the counter! I tried to catch it (without thinking) and ALL the other 6 of the eggs fly out with it! Eggs and flour erupting all down to the floor! Luckily I had shut the drawer! I wanted to cry. But I did not. :) I got lots of paper towels and cleaned up the MESS! Yikes! Thankfully I had bought an extra dozen eggs and had lots of flour too so I started over. This time I used a very large glass bowl. It worked perfectly and I continued on with the recipe. I am on a break now with a small glass of brandy and just have the honey left to do. Just thought you and the others might get a good laugh at the image of someone who never tried the flour mountain with the eggs in the well. I have to laugh at myself too! I bet my Sicilian grandma is saying some choice words and laughing too :)

My Dear Mary-Rose I’m between laughing and crying at the same time. 💖 your Sicilian grandmother must’ve been using a very colorful expressions from up there. 😂😂I must also admit been there and done that. A few weeks ago I spilled the oil holder all over the kitchen stools. I had to just reupholster them. 🤦♀️ Enjoy the brandy and making the struffoli plates. It can be stored. Tightly wrapped it in plastic wrap and then in a ziplock bag. Store in the refrigerator not more than 2 days. Thank you so much for watching!

I haven't made these in like 15yrs. My kid won't make them for me either. :( We make them differently. My mother rolled every one of those tiny balls. I told my kid not to bother, short cut for just me to eat & tastes the same.
