Hello Nadia! Thank you for this video! My wife and I prepared it last night. The preparation was easy and went exactly as you said it would.. Even though your ingredient amount recommendations are a bit unconventional, we quickly understood that there is flexibility in the amounts used. We tasted it last night but we intend to feast on it today. I think a night of tempering in the refrigerator improves this kind of dish by allowing the flavors to meld.This was our first effort at making a Palestinian dish. It will not be our last!

Have you ever tried cutting into chunks and putting in air fryer? It comes out incredibly smoky and delicious. Also, doesn't need much input, very easy. I do this also for salads. Thank you for the recipe ❤

Hi habeebti, when I make babaghannouj I peel the eggplants in a bowl full of cold water, you keep the flavour and it’s quite quick, I learned it from my mom!

This is AMAZING!!!! I could eat it by itself with a spoon!! Made it for the first time tonight & even bought pomegranate molasses to drizzle. I never cared for eggplant until I tried this. Thank you!!

I like your version but just an fyi, I've used cashew yogurt, which works very much the same as dairy yogurt. I'm on plant based/vegan diet.

Some tips from my own experience: 1. Keep the eggplant whole, the steam created cooks the inner part efficiently (just don't forget to rotate frequently otherwise it may explode...) 2. Use a fork to mash, I like keeping the eggplant threads as a final texture. For garlic I just add zhugg

Yay! As a vegan, I would leave out the yogurt. Roasting the eggplant on the stove, I hadn't thought of that. Glad you are back.😀

Oh yum! I wish I had a gas stove so bad! Will need to experiment with my camping stove ;) One recipe I'd love to see a vegan version of is Fatteh hummus. I used to live in Beirut and that was one of my favourite meals.

Definitely making this dip. Such a simple but tasty way to enjoy eggplant! My new year’s resolution is to explore more middle eastern recipes as its not an area of cuisine I’ve cooked much for myself.

Good to know. Ironically I get the dip from a Russian market. The magic of the dip is it has a lot of garlic but is not bitter at all.

So glad to see you posting a new video. I have a recipe request: Mulukhiya. My grandmother used to make it for us growing up. We called it the “green stuff” 😉. it was our favorite. My grandmother passed many years ago and I wish I learned how to make it. Anyway, Hope you have a very happy new year ahead.

Happy Holidays! What’s a good way to smoke the eggplant if no gas stove or bbq? 😬 will prob just get a mini bbq lol

You can also just cut it in half lengthwise and slow roast the eggplant in the oven and cover it - and then quickly broil it at the end! Broiler can be a friend :) Grill is king to be honest, when I have access to a grill I always do it that way

Glad to see you again! Tell me, do you have any fish recipes up your sleeve? Your Fatteh is just perfect as a side dish for fish kofta - I do am eating it at least once a week... pretty obvious why I'm looking for some other ways of preparing fish, isn't it;)

Mutabal is my favorite dip, and then Hummus. Thanks for sharing. Could you make the Palestinian dish of rice, meat, the meat is cooked in a yoghurt cheese sauce(I've forgotten the name of this yoghurt cheese).

When you say "on a grill", are you talking charcoal? I literally thought about doing something like this a couple weeks ago, but I was afraid that charcoal flavor would be a little overpowering. Maybe I need to revisit it now?
