I feel so...uninformed. This is genuinely the first I've heard of Manicotti made with crepes. So, I had to educate myself and I find information that says traditional manicotti IS made with crepes, not pasta! I feel like my entire world has been...a lie. I may have experienced my first existential crisis. 🤣😂 So thank you two for a new understanding and another recipe that I need to make.

I just discovered using crepes instead of pasta for dishes like lasagna & manicotti and guys, I think it’s far superior than pasta! Even homemade pasta. It just makes it more delicate and savory! Your Manicotti looked amazing. I bet the smoked Mozzarella adds so much flavor. I haven’t seen smoked Mozzarella in the store yet but I always see smoked Provolone. I bet that would be a good substitute. I’ve got a couple of pounds of Ricotta to use by this weekend so I was so happy to see this recipe of yours pop up. You two make it so fun to learn new recipes. Love you both!💕

I use caputo 00 flour for my crepes then I let the batter hydrate for an hour before I make them in a rectangular Japanese omelette pan. I add water to thin, not more milk.

These manicotti shells, although not the same recipe seen here, are what has been used in my family for the past 60 years. Passed on before that from traditional northern Italian family back in the day. Water, flour, and eggs to make the soft manicotti shells in a pan. So much better than the store bought pasta tubes
