Stuffed Portobello Mushrooms- Bacon, Asparagus and Brie
This stuffed mushrooms recipe is one of our favorites, if you like baked Brie, then this recipe is for you.
Recipe:
Ingredients:
3 each- large portobello mushrooms
1/4 cup- diced yellow onions
6 each- asparagus spears, chopped
1/2 cup- diced bacon
8 oz- Brie cheese round
1/4 cup- breadcrumbs
olive oil
salt
pepper
Method:
Trim mushrooms by gently removing the stems. Using a spoon scrape the gills from the mushrooms.
Reserve the stems for the stuffing. Chop and place into a mixing bowl.
Add olive oil generously to both side of the mushrooms. the oil will quickly absorb into the mushrooms.
Heat a saute pan over medium heat, add bacon and cook until almost crispy.,
Add onions, asparagus and mushroom stems and saute until the asparagus softens.
Season with salt and pepper as needed.
Add breadcrumbs and stir, if the mixture is too dry, add a little water.
Remove the mixture and set aside.
Preheat oven to 350F.
Slice the brie cheese into 1.4 inch slices.
Divide the stuffing into equal parts. place into the mushrooms.
Top with Brie cheese.
Bake at 350F for about 25 minutes until the cheese is melted and mushrooms are soft.
