but how do you get your height maps to pop out so much in the real time renderer? my height maps never look as plastic as they do in any tutorials and it's driving me crazy :D

that is because the height is added as a displacement map inside marmoset toolbag, so it's actual geometry that is popping out. You are probably only using the normal map.
