I find it so amazing that we have the same dish specific to the Visayas region in my country (except we don't use fruit salt, I don't know what that is)! We call it Putong Bisaya. So nostalgic and indeed it is the perfect snack, and pairs so well with a hot chocolate drink!

Eno fruit salt is a combination of baking soda (sodium bicarb), sodium carbonate, and citric acid. A good substitute that works is baking soda and lemon or lime juice. Sprinkle the baking soda over the dough, pour the juice over the soda. Stir to mix, then steam. Subukan mo ang medjo kulang na 1/4 cucharita at kalahating cucharita nang calamansi. This steamed sponge sweet rice cakes are very tasty and mostly made by Chinese. I wonder if there's a substitute for Eno which I can use.

Looks delicious. I have tasted a similar very staple food in India called idly. Also, a tip: eno can be used in place of yeast, It's fast! And another one, for those who don't have ENO, add 1 tsp of baking soda to the batter and when about to cook, add 1 tbsp of vinegar or lime juice and mix quickly and pour in tin and quickly cook as co2 produced which makes it rise fizzes out quickly.

Instead of yeast for non-vegans , add yoghurt -oil- Eno . This is sweet version of instant- idli Indian style. Can also make savoury cakes with Semolina or paste of moong lentils for non-carb alternative

Powder sugar for cakes. If you put coconut milk it becomes Filipino version of Puto.

What can you use to substitute the fruit salt. We don't seek it in our country

You can skip it, no worry, still taste delicious. Just the top of the cake is slightly split and cracked.
