Just made this. My brand of black bean sauce looked abit on the brown side n I wasn’t too sure if I hv got the right sauce. But it turned out right. Added abit more sugar to balance it out. Family approved. Thx Roland. 👍🏼

Hi chef, Can I omit the salted black beans and use only black bean paste? It's hard to get the salted black beans. Btw, your wok and wok cover reminded me of my grandma and mama... they also used the same set ❤

Do you need to add meat tenderizer to make the ribs tender ?

Hihi. You don’t have to because cornflour will help to make it “smooth”. You can tenderize the meat by hammering them for a bit. Happy cooking!

Hmm. Good morning from Singapore! You may replace it with oyster sauce but it won’t taste like what the dish should turn out to be because black bean paste doesn’t taste like oyster sauce.

OK, I will look for it! I bought this, but it's not the correct product, right? The name doesn't even say 黑: Black Bean Garlic Sauce www.amazon.com/Lee-Kum-Kee-Black-Garlic/dp/B000F08KCU?th=1 . I love your recipes btw and have already become a better cook in the several weeks I am watching them :-)

Thanks for this recipe.. looks delicious. May I ask what kind of spareribs do you use.. maybe regular or baby back . They look like that’s have a lot of meat on the bones.. so maybe country ribs.. Well please let me know!!! Happy New Year

Happy new year to you Sharwil49. We just used regular spare ribs. Its the lower portion of the pig near the belly and breastbone behind the shoulder. Alternatively, you can just let your butcher know you wish to have meaty ribs. He should be able to help you with it. Happy cooking!

I enjoy yr recipes but yr English really sxxks. what do u mean by approximately at least two hours n above. This ambiguity makes no sense. I think u r saying marinating time will take at least two hours. Why estimate when u already are telling us it is two hours and above.
