I would love to see some fall winter dishes. The kind of stuff that wants you up like soups etc. I don't know a lot of dishes but I would like to learn more about seasonal food.

I'm a British Born Chinese, my father is currently in hospital with a stroke. his currently requesting this exact spare-rib recipe. I tried getting an ingredient list from him and I can say this is about 95% there. I just like to say how much I appreciate your videos, this moment in time. Your videos are not just cooking videos but a library of a very specific cantonese chinse immigrant generation which is currently being replaced by the mainland chinese. Keep up the good work and you have earnt a patreon subscriber!

Me too!! Hearing canto makes me feel like home. This is one of my most favorite dishes. I braise mine but I found a recipe I can follow for the steam method.

Your Dad is so awesome! He's so detailed in describing the ingredients and steps in his recipes. My Dad was a great cook too. However, I never took videos of him cooking or wrote down his recipes. He recently passed 2 months ago. It's great you're sharing your Dad's recipes with us, as well as experiences with your parents. You're a great son!😋👍

Hello Family Lau !! I am so happy I stumbled onto your channel! I subscribed immediately .... my parents have passed and what you’re doing here Randy takes me down memory lane . I missed the stories and my weekend dinner times with my parents and grandparents . My family came from Canton and the life your mom described is what I have heard from my grandparents and my parents. It was not an easy life and I appreciate all the love and sacrifices they made for my brothers and I. I am so enjoying Daddy Lau’s tutorials ! Now, I have a virtual teacher, one of the best !! He explains the techniques and the tips , secrets is what I value the most ! I love the great effort you’re putting into this channel . Very very well done 👍👍👍 . This channel is now my go to channel for Cantonese cooking ! I will be teaching my children how to become top home-cook chefs via Daddy Lau. They have left home now and they keep asking how to .... so now they will get links to Daddy Lau’s videos! Hopefully one day soon, I will be in your mom’s position.....holding my grand baby while everyone eats. Your parents are so precious to watch as they cuddle Cam Cam. In your family , your dad cooks. So glad to have found this channel. It can highly recommended in a Cantonese cooking group on Facebook. I not only use it to learn cooking but I also use it to keep up with my Cantonese. My parents passed away a number of years ago and my siblings have moved away from my city so I have no one left to speak Cantonese with as my wife is from Taiwan and we speak mostly Mandarin and English at home. These dishes bring back so many memories of what my mom made for our family. Such warm and wonderful smells, tastes, and memories.

i used to live in HK in the late 70 and I love the Cantonese food, when I came to USA I tried a lots of Chinese restaurant but some how it did not taste the same, six months ago I ran across your video and I started to cook like the way your dad show now I can enjoy Cantonese food again and the good thing is you do it at home. thank you so much for sharing.

I can't wait to try this recipe. My dad made something similar when I was growing up. He has since passed away. My dad was a man of few words, and we would have to run the restaurant while he cooked our dinners, so watching how he made the dishes wasn't always an option. I've come across your videos in hopes of bringing back my childhood dishes. This for me is "soul food."

As a cantonese, I have been eating steamed ribs for years but never learnt to cook one to the most familiar flavor. Thank you so much for making this video to teach me how to make one and I cannot wait to try it again. Moreover, I start to appreciate how my parents prep the food with lots of wisdoms. They know why they are doing it but I never listened LOL

I love the explanation that your folks give. How they explan the use of the peels, how to care for the ribs, the explanation of baking soda and etc.. It reminds me of my conversation with my Mom. The questions that Randy ask are similar to the ones I would also ask. My Mom recently passed away this past May and watching these videos reminds me of all the special conversations I use to have with her. I operate a food business and I would always ask Mom for feedback and advice with new dishes. She would always share origin stories about the dish, the variations, the techniques involved, the hacks/shortcuts if possible and how to simplify the dish for commercial purposes. Thank so much for creating this type of content for all of us ABCs that grew eating these types of dishes...long overdue Randy and your doing an amazing job! 🙏🏼

I agree with StarryzSnow 110%!!! I also like watching this because it is done in half Cantonese and English. Chef Daddy Lau is just like my grandma in terms of his cooking, and like my dad in terms of his explanation. I luv how you film your parents having simple conversations that most Asian families have in their households. I also like your mom's explanations -- very helpful and detailed! During this pandemic, I am finding myself cooking more of the foods I grew up with....I enjoy this channel very much...thank you!

Lau family- great story....I was craving dim sum so hubby took me on a trip to Chicago. Wow so many restaurants and banks lol. We found a dim sum restaurant with lines to get in, but it wasn’t too long. We ordered many dishes to try. The place was packed and noisy with the big family groups, servers banging steam pots, waiters calling for bus boys,, people on line,,,, I was happy as a CLAM, till I asked my hubby how he was enjoying, and he was fast asleep, sitting up with his arms crossed on his chest. My family is the “loud family” so we grew up with shouting and laughing and trying to talk over the din.We all got used to the bignoise and it put us all to sleep. It was exciting to see my husband had grown accustomed to our loud family even if it was in a dim sum restaurant.

Love this video so much. The parents in the video really reminded me of my parents - the way they talk to each other, and the way the mom sometimes is a go between between father and child, etc. My dad was a chef for decades, too, and I would always ask him for recipes, and he would explain them to me much like the way Daddy Lau does. I also love the background info, stories from the past, and subtitles. They're providing much joy and instruction for this novice Canto speaker/reader. Thanks so much for this channel. This was the first video I watched from it, but it won't be the last.

My grandfather used to cook this for me, my siblings and my cousins for dinner nearly every night. This with rice 🍚 is all you need. He passed away last year and finding this video brings up a lot of memories in which we now cherish. RIP Goong Goong ❤️

Omg! I made this for dinner last night and served it over steamed rice. My son and his fiancee were blown away! I doubled the recipe and increased the cooking time to be sure the ribs were cooked thoroughly. They were so tender and flavorful. Thank you so much for sharing.

Thanks for your channel. I'm Cantonese too. Old family recipes here. I also use Kum Pei (dried orange peel) for steamed fish too. In Singapore and Malaysia, we use dried orange peel in red bean soup as well - Hong Dou tong.

Haha yes that was very insightful to hear! I think the same could be said with a lot of other dishes, even outside of Chinese cuisine. And as a semi-related tangent, it's amplified with our Instagram culture. Not that it's a bad thing to celebrate how beautiful food looks and to spend time styling it (I definitely do that for our videos), but it's definitely become an even more important aspect of the food industry nowadays.

@@MadeWithLau there are tons of ways to “modify” foods to make them mote photo worthy, but oh boy they don’t help the taste much! And unfortunately appearance and style creepy their way into recipes and alter the traditional tastes but still get called “authentic” and “traditional” and unfortunately give a misconception to many dishes, some dishes just don’t need to be pretty to be absolutely delicious, and if their delicious, it’s sure not pretty when you’re shoveling it into your mouth haha, maybe you guys could post a video about Cantonese salted fish and pork or pork belly, a very bold example of something drop dead delicious, but not as pretty, (or good smelling initially if you get the REAL salted fish lol)

Very interesting conversation at the end about marinating. I feel it has become quite common for youtube chefs to say marinate over night. To hear a proper chef say not to do that with certain things is insightful.

when using baking soda you dont want to marinade for too long or else it will make the meat mushy, you can also rinse the baking soda off after marinading to further reduce the alkalinity

Every time I watch an episode of channel, I think of my dad’s (RIP) cooking, and how much I miss it and him. He would make whatever I ask. One of my guilty favorite is steamed pork belly with ginger, scallion, and fermented shrimp paste @Lau - This is more than a cooking show. It is oral history and a family treasure. Please do an episode on the pork belly and shrimp paste.

For anyone just casually watching and haven't had this dish...let me tell you the umami is extraordinary. You've essentially marinaded and steamed the spare ribs in the black bean. I can't think of another more potent flavor than a fermented black bean. It's the king of punch-you-in-the-mouth-umami.

I made this tonight for dinner and it was such a big hit. There are 5 people in my family so I doubled the recipe which defaulted for 4 people, and the plate was nothing left over. The flavour was nicely balanced and black beans were not overpowering. The website for the recipe is really professionally done as you can enter the number of serving and it will adjust the recipe for you. You can also switch between metric and empirical... which I love. So much work and effort has been put into making this video and the website. I love how there's a always a bit of historical background. Honestly guys... how can any 1 give a thumb down. Thank you for making the video and keep up the good work. Hope to see a video and how to make hong kong flaky custard tarts one day. 🥰

I just felt touched by the family bounding here! I assume the son is an ABC or an FOB when he was young. It is so nice to see him keen to learn about the family history and the past life in China, and be proud of it. The video series will also be a gift to the baby, for him to remember the grandparents' love when he grows up.
