Compliments to the lady making the pasta dough. Kneading and shaping this dough is absolutely exhausting. Rolling out and cutting the dough is a skill of the highest perfection.

It never ceases to amaze me how quickly and efficiently Japanese people can work in tiny, crowded but clean and organized spaces. We can see it takes an army of experienced and young workers and a real team spirit to prepare and serve this much food made from scratch to this many customers with a smile and "sun in their hearts." Just preparing the handmade soba is a real physical workout! And they don't even show how they handle the dishwashing of all those little breakable dishes (or where they put them) during the busy hours of service. I have enjoyed New Year's Eve toshi koshi soba with friends in Tokyo, but I never thought about all that was going on in the kitchen and hours before we got there. I don't think I would wait for hours in line for the delicious-looking meals at Sarashina, but apparently, their regular customers think and know it's worth it!

Seeing how the noodles are made by that absolutly master was so beautifull to see. 4:16 to 11:50, and ofcource seeing the rest of all the people help to make it all come together was awesome to.

Sheesh, 9 generation?! First time i saw it was like, if 1 generation could live up to 100 years for example, so the restaurant have been around for 900 years. Thank god they show when the restaurant was been around. Since it's 1789, so it's been 200+ years. What a story to tell if you have a children and grandchildren😂
