Today, i would like to share a delicious dessert recipe. Thick Pudding Prepare caramel Sugar 100g Water not too much, just nice to wet all sugar Medium heat Masa's Point to prevent burnt mark at sides of pot, do not shake/tilt the pot. Prepare a cup of water (about 30cc) Caramelised starting from the sides. Shake the pot to mix the caramel thoroughly. Continue heating untill mixture turns into coffee colour. Pour in water gently Masa's Point: caramel will sizzles onto hand. Can wear gloves before pouring in. 18cm mould Spread the caramel evenly. Cool in ice water bath. Prepare pudding egg mixture 5 Eggs Mix evenly Masa's point: unlike sponge cake, just whisk gently to mix the egg. Do not overbeat Masa's Point: for smooth texture, do not make alot of small air bubbles in the egg mixture. Sugar 125g Masa's Point: ensure sugar melted (but not beat the egg) Milk 450cc Fresh cream 50cc Masa's Point: omit fresh cream, all milk (500cc) is alright Medium heat Boiled. Pour into egg mixture Mix well Sugar is in egg mixture (increase boiling point) so that when pour in boiled milk coagulation will not takes place. Proportion: Egg : milk : sugar = 1 : 2 : 0.5 Can reduce sugar Add more milk for smooth pudding scoop from the cup. Pour mixture through sieve for smoother texture Use flame/fire gun or cloth to remove air bubbles. 150°C (preheat) Lay a layer of cloth, pour in water Filled water to half of container Loosely place aluminium foil to cover the opening 150°C about 40minutes Knock on the side to check whether centre is cooked. Cooled in ice water bath Or cooled overnight Remove with small knife or spatula
