If you are managing multiple websites, should you have each Google Console under a different google login? I have multiple sites now under one google login but I'm not able to verify with Bing. Not sure if this is why.

At 24:30, you could've just used Click URL for a trigger. Why use Page URL?? The Page URL condition will be satisfied for all the pages, isn't it?

In GTM you choose which data send to your GA by setting up triggers, for instance click on certain texts or certain links. There are many options available.
