If you make yourself a small dirt island, you can bonemeal the moss blocks on it, to get grass (for wheat seeds) and an azela tree, which you can also bone meal to get a full size tree. Hopefully the wandering trader will have a sapling or two!

Just so u know, saplings can be bought from wandering traders for roughly 5 emeralds, it's best you make a large platform to spawn them or find a big frozen ocean
