Sweet Plantain Bread, moist & flavorful, easy & simple

We are familiar with Banana Bread, but have you ever tried Ripe Plantain Bread, absolutely amazing! More delicious than a Banana Bread
Ingredients
2 large overripe plantains
1 cup sugar
2 eggs
1 stick melted butter
1 3/4 cups flour
2-3 tsp baking powder
1/2 tsp baking soda
1/4 cup milk
1/2 tsp salt
1 tsp lime zest
1 tbsp vanilla essence
1 tsp cinnamon powder
1/2 tsp grated nutmeg
1/4 cup currant & cherries or nuts (optional)
Bake at 350 degree for 45-50 minutes or until perfectly done.

@@steffanihalstead517 My nana thought me how to make candied plantains, you just need some over ripped plantains, butter, brown sugar, salt and cinnamon. slice the plantain thinly and layer then in warm pan with melted butter, fry for a couple minutes on the first side, turn them and sprinkle with sugar cinnamon mix, add salt to taste. serve warm with Caribbean spiced rum.

I'm going to make it now but I never use eggs and baking powder/soda so I'll be substituting those with flax gel( about 1/4 cup flaxseed brought to a boil in 2 cups water, then strained). I had been eyeing my plantains all ripening up at the same time and this idea came to mind. Next thing I know this popped up for me to watch. There goes my confirmation.😅

I'm Caribbean but do not like Bananas but I *eat Plantains almost daily consuming Fried or Boiled Plantains* and Fried *Sweet Plantains* almost Daily. I Love the little *Fig Plantains* as well. So I will be using "Plantains" to make my Bread. I have NEVER eaten Banana bread because it's made from Bananas but *planned on making it using Plantains instead* for a while. Now that I've seen someone use it, I'll Definitely be making and Eating Plantain Bread.
