Sweet Pork Salad (Moo Nam Tok version)

This Sweet Pork Salad brings back memories. I ate it for the first time on my honeymoon in Australia, in a restaurant called Spirit House, not sure it's there any longer. It's a kind of a variation of Moo Nam Tok, but the pork is sweet. It's an extremely refreshing salad that fits perfect on a warm summer evening. Give it a try yourself and let me know what you think!
