I added some harissa paste to my chicken cacciatore, it was delicious! Much more flavorful than just adding red pepper flakes and not too spicy if you use the right amount.

As a garlic farmer who loves to cook. You are correct adding the garlic at the last minute. When garlic is heated over 120 degrees it immediately begins to lose it's beneficial properties and flavor rapidly decreases.

I love how you cook. I was always taught "Waste not, Want not" When I have a flavorful ingredient in a jar, I find a way to use a liquid to grab the flavor and clean the jar. Sometimes just a few tbsp. of water. Makes a great chef.

I make mashed sweet potatoes with butter,s&p, a little maple syrup, and bacon. Savory with just a hint of sweet. Can be adjusted to your taste. For St. Pats, I make sweet potato kale Colcannon. Chef could do a whole video with sweet potato recipes. Fries, hash, etc.

I bake a fat round Louisiana sweet potato until soft when you squeeze it, cut it open, pile on the butter and eat. If you want to add sweetness, dust with cinnamon sugar, but it is unnecessary.

Harissa is amazing! I've noticed QUITE a few KZbin Chefs also have high praise for harissa. It was your "gourmet steak burrito" that got me to try it. I freeze Harissa now, in ice cube trays, otherwise it only lasts a week in the fridge. (Those burritos were the bomb)

I always love your videos. One of the issues with cooking videos is they are usually targeted for 4 or more servings but there is only 2 of us. It would be nice to know if the recipe can be proportionately adjusted.

I made these today. My kitchen has **never** smelled so good. Also, the light fluffiness of these are absolutely outstanding. I added bacon bits I had made a week ago when I put in the spinach and garlic, and I used thyme as well as sage. Also, I didn't have harissa, so I used a little bit (less than 1/3 of what Chef used) of Louisiana Hot Sauce. Absolutely outstanding. How would you recommend storing them? Fridge only? Freeze? I have a chamber vac-sealer, but I'm afraid there is so much air in them they will get destroyed in the process. It's just the wife and me, and I made 24, so we'll need to store them somehow. Also, reheating? I did one for 30 seconds at 80% in the nuker and that worked well, but if reheating a bunch would you do it in the oven?

You can freeze them, but not for very long a month or two at the most. The best way to reheat them is in a warm oven 275 Fahrenheit max until you reach and then internal temperature of 150F! 👍🙂
