The "taco" filling used in the two recipes featured in this video is a long-time favorite - it was passed along to me from a lifelong vegetarian friend of my aunt. About this time of year every year when the sweet potatoes start arriving, it's one of my favorite recipes to make. I think this is partly because it's the recipe that got me to like sweet potatoes - with lots of fresh lime, spices, herbs, sweet potatoes brighten right up and don't taste, well, too sweet!
In the video, I use the filling to make burritos as well as "bowls". But you can use it in quesadillas or tacos of all kinds - it's delicious in breakfast tacos.
