Loved the Shari Lewis shout out! You have to be "of a certain age" to have caught that one. And by the way, this dish looks fantastic. I love all things tamarind. And I would make them with loin chops for an easier-to-eat appetizer.

Wow! Made this for dinner, after finding a 10 pack of lamb tenderloins at Costco and a jar of tamarind paste in the pantry. This dish is a keeper. Prep time and cooking time are quick, making it an excellent choice for company. The presentation with lime quarters and onions looked great on our table. Thanks, Chef John! A flock of wild turkeys walked past our door while I was cooking, but I didn’t miss turning all the lamb pieces.

If you're big into healthy eating: lamb is almost always grass fed, as opposed to beef which is usually corn or grain fed. You are what you eat, and so is your food!

Yes, lamb is indeed usually grass fed. This is one of the reasons it is so expensive.

I suppose it depends on what country your in. In Australia we mostly have grass fed beef. There is no big feed lots like that stuff they have in the US. Well at least not where I live. It's all green grass down in Gippsland Victoria Australia where I'm at.

@@phraydedjez 'Merican here; never knew that about the Australian food industry. We've had the factory farming "go big or go home" push since the 70s that led to our nasty nutrition crisis today. I gotta I assumed that was taken on by most of the rest of the West.

@@stantheoneandonly yeah I think all of Australian beef is grass fed and like less then half is finished off on grain and most of the grain finished stuff goes overseas from what I have looked at, Its super eazy here to go down to a local supermarket chain store and get grass fed beef steaks, its actually cheaper then the grain fed stuff around here lol. I think the reason America is so big on the grain fed stuff is because of the corn industry.

@@stantheoneandonly I just went to the fridge and looked at the beef mince I bought from a local shop, Its grass fed, the 21 day aged grass fed eye fillet steak I have in the fridge that weighs 260 grams cost me $12aud which is about $8us for 9 ounce steak, so maybe we pay more Im not sure. but thats for what we call the eye fillet and grass fed and aged 21 days

If your fish sauce smells bad...it might be a bad brand or past prime. I recommend the red boat kind, very rich aroma and intense umami flavour. Another tip: add the fish sauce when the food is hot. The heat seems to "bloom" the sauce which usually eliminates any fish smell within seconds.

The good news is that once you've tracked down the elusive stuff, you can pick up several jars of it. Sealed, it keeps essentially for ever. Once it's opened, you can fridge it, and it keeps essentially for ever.

I cook my chops on the grill of my convection toaster oven with identical results. Oddly they're better cooked thru than rare or medium rare and stay tender.

Love these recipes but sometimes you being US and I'm English - tomato/ tomatoes thing. What do you mean by broiler? Is it the same as a uk oven grill ? Best cheese on toast is under a grill with real cheese

Tamarind paste might be easy to find in California, but even in Boston it's hard to find in physical stores. The powder is widely available though.
