I'm not a stay at home mother anymore, as kids have grown BUT, that doesn't stop you from sleepless nights still worrying about them, and other worries. This time of year can be a catalyst for worries too. I survive on less than a couple of hours sleep a night, sometimes less, so seeing your KZbin video come through at this time, was great.

Throw your worries in the bin, otherwise they pull you down, age you and stress can cause health problems.. You raised your children, you taught them well, and now they are enjoying their life..its time for you to enjoy you, and inner peace which comes from letting go.. Mine are all grown, many years now.. and l know many people who are still worried about their children.. Yes, l think about my children, but l enjoy being me now, not just a mum, 24 hours a day.. , a woman, a cook, a jack of all trades as l have to fix, renovate or just sing and dance around the house and no worry about what others want or need.. It's freeing yourself, not from the love, but from things that you can't control, their lives and choices.. Take care

Stacey, I love watching your face when you try what you've been making, it makes me smile when its clearly delicious.. Good food is one of the pleasures of life, and it makes us happy. Ignore the miseries out there, they're unimportant and probably very miserable people. You keep doing you! As for telling you what has been my favourite vlog so far, I can't because they're all my favourite. I've said it before and I'll say it again, I would much rather watch you than any tv chef, you're just so natural and enthusiastic. There's so much reliance these days on buying everything from the supermarket and you show everyone how to make it at home, like condensed milk for example. Love your videos. I watch your videos because it's like sitting in a friends kitchen while she is baking/cooking and yes we would be sampling what is made, lol probably eat all the rum balls and have to make more for the gift boxes ha ha and I don't drink lol. Thank you for taking the time to do the 12 days of Christmas, it is a hell of a time without putting yourself through more work and the idiot keyboard warriors just block them without any second thought. Merry Christmas🌲 I'm loving this series 😊 Honestly, I had a good year until late November when I got slapped with 6 life changing events in the space of a week. They will follow me into the new year but right now it's just one foot in front of the other and making jokes along the way. I think we all focus on that one person that upsets us rather than 99% that want us to succeed so don't beat yourself up. I tell myself people like that are irrelevant and maybe that's why they say what they say - to feel relevant 😉😂

I hate rolling truffles, so I bought a couple of silicone chocolate moulds, I first coat the mould with chocolate & set, add the truffle mixture while still soft, then I chill them & once set I add a bit more chocolate to the base, set again then unmould. Because they are melded into shapes the recipients think you are so clever😂. I also add freeze dried fruit pieces to some & they are delicious, some of my family adore white chocolate (yuk) so I make white chocolate & strawberry for them, I’ve made dried cherries soaked in brandy with combination milk & dark chocolate & rum raisin in dark chocolate to name a few! They always go down a treat as gifts, last Christmas I went through over 4 kg of chocolate making treats. Another very easy one is haystacks, melted chocolate with desiccated coconut added as much coconut as the chocolate will take, just add mounds to a silicone paper lined tray & allow to set. Your rum balls are a new one for me to try, my next chocolate making day I will be giving them a go…thanks ❤️❤️👏👏🇬🇧

My memories as a kid I watched my mum make coconut ice on the stove (my favourite) then in the mornings after she left for work and before I sent myself off to school. I tried to make a batch myself 😂😮 then come home for lunch to try it lol. Many fails 😂😂😂 mum used to wonder where all her ingredients were missing 🤔

I can never understand why people feel the need to have to say hurtful things to another person, especially when that person is working so hard to bring us all beautiful things that we can make and eat and also helping us all get through this crappy time with prices so expensive (well I think everyone on here knows what I’m trying to say). Just ignore people like that Stacey. We ALL love you and your videos and we all appreciate everything you do for us. My kids all love the coconut balls/rum balls/golf balls, whatever you want to call them I’ve even made great big jars filled with them for. Christmas gift and they all loved them. I’ve never had much luck making truffles for some reason, but now I’ll have another go at them and coconut ice, I love them all. My Dad used to make coconut ice and I haven’t made it since I lost him but I do love it, it’s very sweet though. I also remember using too much red colouring and mine was more red than pink but hey, it still tastes the same. TFS Stacey. Looking forward to your next video.

I just don't understand how anyone could criticise you for the way you eat your own food, for goodness sake! Don't change, Stacey. I am exhausted too, and life just keeps getting busier. When I was a child I ate so much coconut ice I made myself physically sick and the memory is awful, so it's one recipe I won't try, but everything else looks yummy. Love your videos and the effort you put into them. I don't think people realise what's involved. I've noticed a few women You Tubers I watch who are doing Vlogmas every day, are getting burnt out. It's a lot to add to already busy lives, putting pressure on yourselves. You are appreciated, but put yourself first. May I pass on my rum ball receipe from my Grandma? Get a small fruitcake or use left over fruitcake or Christmas pudding. Crumble it, drizzle rum over it. Add some melted chocolate, mix then form into balls, then dip into coconut 🥥 😋 It's super quick and easy when you make them. Take care of yourself ❤ Anna in Brisbane.

Hi Stacey, I had a Christmas dinner party which was indian themed as that is where I was born, I started cooking 3 days before and I'm happy to say it was well worth the effort. I especially enjoyed the pav and trifle episode and this episode as i have a sweet tooth. I appreciate you and thoroughly enjoy watching you cook and your honest reactions make me smile.❤🇦🇺

You are courageous being online. I don't think I could do it. I would get so wound up by judgemental comments. Hopefully those comments are a small amount. I really appreciate your content. They are so good for visual learners and those of us who didn't cook with our parents etc growing up. My cooking confidence is developing and some forgotten knowledge and skills are reawaking after years of not cooking from scratch. I'm looking forward to glazing my ham this year as I don't normally keep it in the oven for as long as you did, I will this year.

For the rum balls, I substituted the raisins with dates. Soaked them whole overnight and chopped them up. Was a bit messy but so worth it. Like you, it's been a very long time since I've made these and the truffles. I think I need to make some 😄 Also, pay no attention to the haters. They're cowardly idiots with no life. I love how real your videos are.

Thanks for all your videos Stacey! I loved the 2 x 1.9kg chickens that you turned into a week of meals and the freezer meals made with 5 kg of beef mince that fed a huge amount of people. Those two were my favourites.

Stacey, if I had to pick a favourite it would be the ham and turkey with a very close second the trifle and pav, the memories were intense but to be honest the rum balls, coconut ice were always a Christmas staple when my children were little also have joy filled memories. I have a coconut ice recipe that uses cold mashed potato it’s now a favourite because it stays firm out of the fridge a must if we have a hot Christmas Day. Rest my dear, I’m struggling this year the heat has been terrible and bone on bone knee pain. So my prep is pretty much non existent, you wear me out just watching! 🌏👍

Stacey, what a coincidence!! I was looking at two of these recipes in my Kiwi partner’s Edmonds cookbook last night (here in the USA) and feeling intimidated-particularly by the soft boil part. I’ll watch this now and go ahead and try them later so he can have some childhood Christmas treats. I agree re the Whittaker’s chocolate BTW!

I found your videos last week and stayed for the accent and the recipes. Nasty keyboard warriors are just cowards because you can’t see them. They wouldn’t say those things to your face. You cannot let them hurt you and I really like you because you are real. You are a normal cook with recipes my Mother made and I am older than you are. I do have to say I didn’t like coconut ice as a child but everyone else in the family did. It is the texture, I can’t eat jelly either for the same reason. It is comforting to have the food we had as children sometimes so I am grateful you are here. Who knew I could make sweetened condensed milk so fast? Or that it could be used for so many things like salad dressing? Stay who you are.❤

Oh Stacey, don't let those rude people make you feel down, glad you blocked them. When you taste the food at the end is my favourite bit. If you don't test it for the taste, how do you know if it worked ok. You always make yummy things, who wouldn't want to have some. The things you have made in this vlog look great, I love coconut ice. I know the pink was a bit dark, but that just means you made red and white for Christmas !!!

Have had a large car repair bill and hit water cylinder bill so have had to change whole Christmas plans . Fortunately I have a wonderful hubby who doesn't really worry about what he gets to eat just as long as he gets something. So it will be lean pickings but that's OK i can make stuff rather than buy it

You are great. Fantastic to see real people gaining popularity. I think in this upside world at the moment we are all exhausted. Time is flying by too quick. Only feels like we were celebrating Christmas 3 months ago. We have hope, love in our hearts, got to keep pushing forward. Loving the 12 days of Christmas.
