Sinigang
2 tablespoons oil
1 small (6 oz.) onion, peeled, cut into 8 chunks
3 small (21 oz.) tomatoes, quartered
7 oz. fresh green beans
10 pieces (5 oz.) okra, top and bottoms removed
1 medium (10 oz.) zucchini, trimmed and cut into quarters
1 medium (7 oz) eggplant, trimmed, cut into quarters
25 grams (or 1/2 pack) mamasitas sinigang sa sampaloc mix
9 cups water
3 large handfuls of spinach
Salt and pepper, as needed
1. In a large pot, add in oil. Once heated, add the onions to a large pot and sauté for 3 minutes.
2. Add in the tomatoes and cook for 3 minutes more, or until the tomatoes are soft.
3. Add in the green beans, okra, zucchini and eggplant, and cook for about 5 minutes, or until everything is fragrant and begins to soften.
4. Sprinkle in the sinigang mix along with the water and mix until uniform. Bring to a boil.
5. Once boiling, reduce the heat to a simmer and cover the pot. Cook until the vegetables are softened, about 8-10 minutes.
6. Remove the pot from heat and stir in the spinach. Season with salt and pepper to taste.
7. Serve with a scoop of rice. Enjoy!

You're amazing!!! My Mother, is a nursing teacher, and her co-worker for about 15 years, when I was growing up, is Filipino 🤗 At the graduations, (very diverse!!!) they would ask students to bring a dish, if they'd like. Omigosh (pre- vegan), I LOVED the medium/large sugar buns filled with butter, and cream. No idea what it's called???!?!?!?!?Absolutely freaking incredible! Pretty much all the food is though!!! 🥰🥰🥰🥰 Always have been thankful for the diverse pallet, but Filipino food is SO insanely good, and makes my heart happy to this day!! 🤗 Our family, made rice, and rolls today, learned from Mara (the wonderful woman my Mother taught with), how to make them actually. ...Just yum 🤗 12 years vegan next month - adore veganizing cuisines. You are so gorgeous, and love you, the recipes... Love it all 🤗 Thank you!

Filipino foods are actually not only delicious but very nutritious too. Some examples are Bulalo which is usually Bovine bones stuffed with vegetables like cabbage. The bones are boiled for a longer time to be able extract the collagen. But now in the US, the ready to cook bone broth became popular as source of collagen. Another one is Balut which is a good source of protein. Then the Sisig which is mainly bovine or porcine face which is also a good source of collagen. Then Pakbit which is a powerhouse of mixed vegetables like bitter gourd good for diabetics, pumpkin good source of Vit A, ladies fingers or Okra also best for diabetics, & etc. I love your videos, love to see that you do not forget your Filipino culture. Watching from Saudi Arabia & your new subscriber here. God bless!

I live in Hawaii and we used to have a calamansi tree but it got diseased and I chopped it down. I didn't realize how important the tree was to my hubby. Now I will find another one to grow to maturity and treat it with respect. I have been 95% vegan for 1.5 years and I'm not looking back. I have a huge vegetable garden and just planted a ton of asian veggies. I look forward to your recipes because you make it look simple and easy. I know some of these dishes are very time consuming, but me, like you, would rather take the lazy route. LOL!

Re: Calamansi: Try using key limes. Those definitely grow in North America. Not an exact match, but they get pretty close. Otherwise, pre-packaged concentrate / powder should be fine. (BTW you pronounce 'sinangag' just like my wife does. charming.)

You should try learning to use the spoon and fork Filipino-style (spoon in right hand with fork in left hand). Spear the food with the fork and use the edge of the spoon as a knife to cut meat or chunks into smaller pieces. Then use the fork to load the rice and food bits onto the spoon.
