in simpler yakitoris all skewers are baisically the same price. When it is time to pay they just count the number of empty pins in the mug. This place has though more ambition and more dishes. Very nice place indeed. I love the diversity of yakitoris in Kyushu and the south with veggies, ginko nuts etc. It is spreading over Japan, not only chicken with or without sauce. Some yakitoris who serve motsu - intestines, even declare on the menu if it is the 3rd or 4rd stomach! The charcoal grill might give a big smell, my GF hates to wash all clothes after each visit. Still I want to have yakitory twice a week.
I would love to try, but i am slightly scared of eating chicken raw. Did nobody get sick from eating chicken raw?

Isn't it funny in America we treat chicken like its poison? I worked in kitchens for awhile and we literally had to segregate and sanitize everything it touches. Japan has stricter hygiene and safety regulations on their chicken industry compared to say America or the UK I think. Any country that has factory farming systems which is max profit, chicken living covered in their own feces type of environments. Look up factory farming and that's the main reason for our treatment of chicken. Its actually pretty funny that we think its okay to have such dangerous conditions for something we eat so much but I suppose thats what keeps chicken so cheap.

In Japan, Chickens that are utilized in raw or partially cooked preparations are raised according to specific hygiene and safety processes. At the farm level, the Chickens are vaccinated against E.Coli and Salmonella, their feed is heated to kill those bacteria, and the coop houses are regularly disinfected. This significantly reduces the risks for Salmonella and E.Coli. At Toriki Honten located in Shinagawa (Tokyo), I had Chicken prepared as Yakitori (grilled breast tenderloin) and Tataki (seared rare thigh meat). After ordering, the chefs sliced those sections from butchered whole chickens, and prepared the dishes right in front of diners. The chefs cleaned after preparing each order. Their Chickens were sourced directly from a farm that the restaurant owns. After dining there, I did not encounter issues from illness.
