This is a simple easy to follow recipe. I like the idea of not to many dishes. Your mother is so right about the rubbing of the cucumber ends to get rid of the bitter taste. Mexican women do the same thing. It looks so good and this I can make. Thanks Mom and guys. .

I'm so confused about how rubbing only the end can have such a effect. Like, I don't understand how it can work to affect the whole if you slice it immediately after--but, also, if experienced cooks give you an instruction, you should treasure it and be grateful to try it out. Love the look of the potato salad, texture, color all there. Looks yummy. We only use the Japanese Mayo now ( Kewpie) ,my hubby loves that more than the American mayo and so do I. Thank goodness we can get it here in the States! Tell your mother can't wait for the next recipe.

This brings back memories! I remember my Japanese Mother-in-Law making Potato Salad. She would use Kewpie Mayonnaise, and also added thinly sliced radishes in addition to the other ingredients you used. I don't recall her adding ham, but that looks delicious!

So relaxing to watch your mom make this, and everyone speaking in Japanese. Living in the mainland US now (also from Hawaii and Okinawa), I miss my moms cooking. People talking in Japanese has always been relaxing to me, even at Kansai and Naha airport, the audio/speakerphone announcements are so gentle! I love these videos, hontouni, arigato gozaimasu. I shall make this tonight!

It's very hard to replicate something someone else made. You are you and they are they... Even if you use the same techniques it'll still be different because you're two different people. Am I making since. So it's better to take your mom's recipes and make them your own.

We love potato salad very much here in Turkey and we use the similar ingredients. We just use pickled gherkins not cucumber. There is no meat in it but egg is a must :) we also add green onions, olive oil, lemon juice, persley and ground black pepper and a little vinegar :) you should try it out. Nice recipe send my love to your mother. :)

I made Japanese potato salad for a family picnic. I turned out great! I took your mother's advice not to add too much rice vinegar and she was right. I got the taste without the sour. I used advice from several recipes, btw.

I can’t wait to try this. What a great idea to put the cucumber in. I can see how it would break up the taste of the mayo. So often, when I eat someone else’s potato salad they’ve put in so much mayo I can’t taste the other ingredients. Have you thought about compiling a cookbook of your and your mother’s recipes? This looks really good. It is interesting to see what is the same and what is different with our potato salads. Like for example, I use red potatoes so that they hold their shape. I also add shallots, celery and spicy mustard. We both add eggs, mayonnaise and vinegar (except I use red wine vinegar). You're mother's recipe looks delicious - I love the addition of the cucumbers and ham. I'll have to try that next time. I also like that some of the potatoes are mashed. :)
