My stepdad is Japanese and he always makes hotpot in the winter. Omg it's one of my favorite dishes, I need him to teach me how to make the broth. He makes his a bit different and I haven't tried it with the 2 different sauces before. Usually we use ginger and add it to the broth, then I use a bit of soya sauce to my tofu. He also only cooks veggies in the hotpot, sometimes he will add a hard boiled egg for us. I'm glad I found this video bcuz I would like to try and make it for myself, I will have to buy a small pot and a small heating element 😁

wow that sounds good as well! well, in Japan there are surely more than 50 to 100 variation of Nabe Hotpot and it also depends on regions. so just be creative with it! you actually don't necessarily have a special pot, but I used to use just regular metal pot for it and heated on the stove and brought to the table when ready.

I lived in Kainan Shi in Wakayana Ken for a year. A local family invited us for nabe dinner most weeks. In winter we sat at the kotatsu with the warm blanket. It was very warm, the food was delicious, and the company kind and hospitable.

My local Asian market has changed my life. They’ve got it all. From thin sliced meat for amazing prices to noodles and sauces and my favorite trumpet/king mushrooms. Plus you get so much more food than traditional American stores. To top it off next door is an Asian market for restaurants and they carry every cooking utensil you could ever need for great prices as well. And now I’m hungry. Love these videos.

Ahhhh, Shaun Shaun is my favorite, I grew up next to little Saigon in S. Cal. I moved to Oregon and there aren't any restaurants in my town, I would have to drive at least an hour or more to get to one. Thank you for the recipe, now I can make it at home anytime I want!

i don't know too well about meat parts, but depending on if you like lean or fatty cuts. if you prefer lean, then round or shoulder, but if fatty, then loin or rump. for the pot, in most asian supermarket or surely online.

I love this set of ingredients. Almost the same for sukiyaki. I just throw everything into a pot of water and sukiyaki sauce and just boil the entire thing over a low flame until the cabbage and carrots become soft. Then I have it with rice or udon, and dip the ingredients in either raw egg or some sesame sauce. So technically, it's like a lazy person's hybrid meal.

I think of japanese cooking as being the healthiest there is. Now I learn from your channel everything I need to know to cook healthy at home. I want home cooked japanese food, not the delivery or restaurant, which is not traditional in restaurants in Europe. There is a tndency in restaurants to make a europenization" of recipes. I read that he told someone else that you can make it in a regular pot on stove then transfer to table after you finish cooking. Or you can cook it in the donabe if your stove is a gas stove. You can't use a donabe on electric stove though.

How many times should you say “shabu” while doing the shabu motion? Does it depend on the cut of meat? Do you also say “shabu” when dipping into the sauce and if so, how many times should you say it?

it depends on the cut, how high the soup temperature (boiling or lukewarm) but also more on how rare or well done you like. I usually go 5 to 7 times back and forth. and when I am eating alone or with other people, I don't say it out loud, I say Shabu Shabu only inside, lol.

Kombu and Nori are completely different seaweed. Kombu is a very long kelp used (like in this video) to make stock. Nori are tiny algae which is combined and dried, like paper, to make a sheet and used mostly to wrap rice in, as in Sushi or Onigiri.

For how long you have to boil the vegitable before you start to eat it?

its really a preference thing and of course depends on the vegetable. leafy veggies, like leaf part of napa cabbage/bok choi or green part of scallion, only for 1-2 min. harder parts like stem of napa cabbage/bok choi or carrot, and also shiitake mushroom longer, 5-10 min. after a couple of tries, you will kinda know.
