Ingredients
For Spice Bag

1 tsp fennel seeds

For Beef Soup (makes 8 to 10 serving)
2 beef shanks (approximately 1 1/2 lb to 1 3/4 lb), cut into large chunks
6 tbsp cooking oil
15 to 18 cloves garlic, roughly chopped
2 oz ginger slices
1/2 large onion, sliced
5 green onions, chopped
3 tbsp toban djan amzn.to/2UmIWbc
1 large piece of rock sugar or 2 tbsp sugar amzn.to/2Q4WWDI
1/2 cup soy sauce
1/2 cup shaoxing wine amzn.to/3bODhku
1 tbsp dark soy sauce amzn.to/3gMFvmz
1/2 tsp salt
2 large tomato, cut into large chunks
2 tsp beef bouillon
14 cups cold water
baby bok choy, cut into half (1 baby bok choy per serving)
fresh, frozen or dry wheat noodles (1 portion per serving)
chopped green onions & cilantro

This dish originated from Northern🇨🇳and my paternal Grandparents are from Henan🇨🇳and my Grandma would make this for me as a kid growing up.She passed away almost 2 years ago and I miss the taste of of her🥩🍜🥣 so much

@@Jock1971 Of course. Most behind the scenes people are awkward in front of the camera. It takes different personality types to do either side. I'm talking more so see their interactions with each other. It's clear that she loves them both dearly so I'm happy that she gets to keep spending time with her nephew even though she has moved.

As a Taiwanese-American, this is soul food in Taiwan, it's absolutely delicious year round, but a bonus in the colder months :) Thanks for sharing!

This is actually very close to how I, a Taiwanese, cook homemade beef noodle soup at home. Some people would replace licorice with Chinese cassia or use both cuz the latter has more usage than the former. Anyway, I can guarantee it's authentic and yum!

well amazon basically is non existant here and only couple local store chains have online options but those are all in 2-3 biggest towns in country which im not even near close xD and no asians stores here

I just made this and it tastes amazing!!! Flavors are so authentic, bold and just the right amount of umami. You would think that with the amount of taoban djan and soy sauce it would be super salty. But instead, it was just the perfect amount of saltiness without going over board. Only difference I did was add some beef bones (since I had it in the freezer....gave it so much richness) and cooked it for about 2 hrs instead of an hour and a half. Bring back so. much memories of eating this in Taiwan. Thank you Seonkyong for such an amazing recipe!!!

This is perfect timing! We tried to go to Chef Hung Taiwanese Beef Noodle in Irvine CA, and it closed down because of the pandemic. Now I can fulfill my craving!!!!

I’m a big fun of this beef noodles. I’d like to share one tip I learned from a Taiwanese food writer: after 1 hour simmering, turn off the heat, don’t remove the cover, and just let the beef sit in the hot soup for a few hours until its texture is fully softened. It’s going to be amazing. Btw, I’d recommend to use Pi Xian Dou Ban Jiang. That’s the best one.

Missed this COOL Video my dear Seonkyoung but on watching the Shrimp Ramen video, you mention something about Jacob being hurt by some of the comments, lol....now I see why, hehehehe....but all in good jest and the Man's totally IRIE! 너무 맛있겠어요.... 향신료를 다 따라 넣을 수는 없겠지만 몇가지만 넣어 끓여도 엄청 맛있는 소고기국수가 될것같아요 ㅎㅎ 아 그리고 영상이랑은 상관없는 말이지만 '데드바이데이라이트'라는 게임의 '제인 로메로'라는 제가 제일 좋아하는 캐릭터랑 너무 똑같이 생기셨어요 ㅎㅎ 너무 닮아서 더 그 캐릭터가 좋은가봐여

Whenever I use this recipe I have food for at least 4-5 days afterwards, it’s amazing but when I tried it with a spice bag (cloth) it didn’t taste right so my soup has allllll the spices in it still tastes amazing~ Seonkyong is a life saver for us Asian university students that miss authentic Asian food 🥲

@@lisaisa I don’t use a muslin cloth, dry roast the spices in a small pan to release flavour and then fry them in the pot with oil

I LOVE this channel. I’m originally from El Paso, so when I started learning how to cook Asian food, I had to drive all over town to these like mom and pop shop grocery stores for ingredients for a complete recipe. Now I live in the Dallas area in a very diverse neighborhood and there are 3 Asian supermarkets literally within walking distance. It’s kinda the best. I already have 2/3 of the speciality ingredients for this recipe in my spice drawer, so you can bet I will be making it soon.

It's great to be in the DFW area because of diverse Asian groceries, for sure. I moved to Austin for a year and half and was so sad because I was only near an Indian grocer and nowhere near an East Asian one. Now I'm in north Dallas and have access to a lot of grocers again...just not very close to any Vietnamese ones, which I prefer because I can get more variety for SE Asian stuff as well as East Asian stuff.

When you lifted the lid, it's like I could smell everything myself. LOL. Looks delicious! If I wanted to add beef tendons, do you think I could just add it to the pot along with the beef and simmer for the same amount of time?

I usually cook the tendons separately first in a small pot for about 45 minutes then add them into the pool.

Hi, i ve been toTaiwan,but don't know this dish. Is it popular?,is it like Vietnamese beef stew?. How could you eat that portion only?, when i have soup noodle, i bowl is like 7 times bigger and the portion is like 6 times more. BTW, i ve been making/eating your steamed bun everyday. I've tried with the instant pot. Yes, it's faster and convenient, but I still prefer the taste of the slow cook with the traditional way. I used to cook the bone for PHO for 48 hours with a lowest flame.

Yes it's a bit spicy. First it comes from Sichuan peppercorn which gives numbing type of spiciness. Second it depends on bean paste you choose, spicy or not spicy. I would suggest to start with a tea spoon of the former, and choose no spicy bean paste. This is how I make my own family beef noodle soup for my little ones.

My mouth is watering i remember i went Yong-Kang beef noodle soup in Taiwan it was the best beef noodle soup i ever tasted in my lifeeeeeeee🎊🎉🎊🎉. Yours look just like it 👍

Yes, but replace them with Chinese cassia if you are fine with it.

Um I don’t think it makes 6-8 bowls “or more” depending on how hungry you are lol...pretty sure quantity of food doesn’t increase just cos you’re hungry but hey maybe it’s Chinese magic
