I Made Spicy Beef Noodle Soup From Scratch

There’s nothing better than a bowl of steaming hot, flavorful beef noodle soup when you’re tired and cold, especially after a long day. This is something I really look forward to every time I head home for the holidays and I'm very excited to finally be sharing the recipe with you all.
I also realized that we never really wrote down our measurements for this, because “just eyeballing it” has always been the way my mom did it, haha. So I tried my best to write it down.

Ingredients:
FOR BLANCHING
2 beef shank
3 scallions
6 slices of ginger
2 tbsp rice wine (optional)
8 - 10 cups of water
FOR BEEF NOODLE SOUP
7 slices of ginger
10 cloves of garlic (crushed)
4 scallions
3 shallots
1 onion
2 - 3 chilis (optional)
1 tbsp rock sugar (less if adding in more apples)
1/2 cup light soy sauce
6 tbsp dark soy sauce
2.5 tbsp spicy bean paste
4 tbsp rice wine
1 tomato
1-2 apples
1 spice packet (star anise, cinnamon stick, bay leaf, fennel seed, coriander seed)
FOR SERVING
Scallions
Dark soy sauce
Bok choy
Noodles
Steps:
1. In a large pot, add beef shank, scallions, ginger and rice wine. Fill with water until ingredients are completely covered and bring to a boil. Remove scum on the surface, and take the meat out to let cool. Take out the scallion, ginger, and set aside the remaining broth.
2. In a large pan, heat up oil and add ginger, garlic, the white parts of the scallions, shallots, onion, chilis, star anise. Stir gently until the onions become translucent
3. Add the spicy bean paste, rice wine, light soy sauce, dark soy sauce, and rock sugar. Mix again and add the beef shank.
4. Add the cooked ingredients, chopped tomatoes, apples and spice packet to the broth from earlier. Add more water if needed to make sure that the beef is covered. Bring to a boil, and then reduce the heat to low and let it simmer for around 1.5 - 2 hours. Turn off the heat and let the beef sit in the broth for another 30 min before taking out.
5. Once beef is cooled, slice thinly. Make final adjustments to the soup, and strain if desired, bringing to a boil just before serving. Cook noodles and bok choy.
6. In a bowl, add a splash of dark soy sauce, scallions and noodles. Toss to coat and pour in broth. Add bok choy and beef, and garnish with scallions. Better yet, serve it up with pickled vegetables and chili oil!

I just made a vegetarian version of this by simply to using the beef and it was so so good. I made two versions. One with the beef and one without because it was for my moms birthday and they thought the broth tasted basically the same!!

I just have to say that with the current pandemic and the struggle that is trying to find steady employment in the current job market, I am so grateful for your videos. They are wholesome, and soothing, and at the end of the day inspiring. Despite having to be budget conscious, I now have all the inspiration I need to still treat myself to delicious foods in the comfort of my home. (Also you may be partially to blame for my dalgona coffee addiction...)

No way! I just made my own batch of braised beef shank tonight(牛腱)for making beef noodle soup throughout this week. I too like putting extra star anise in mine 😀. The apples and tomatoes are an interesting choice. Some of my other personal stylistic choices: - i also like adding fried red onion - i always save and freeze some of the broth to contribute to the next batch to deepen the flavor over time - it can also be done in an instant pot in less than an hour!

@@lhlien 35 min high pressure, with natural release. Make sure the broth completely covers the meat! Letting the meat sit in the broth in the fridge for an extra day will also deepen the flavor further.

My family uses carrots instead of apples. It adds a little sweetness. And the tomatoes adds a bit of acid. I like your idea to save some broth to add into the next batch!

AHHHH I miss Taiwan so much and I so badly want some beef noodle soup now! And my mom used to make really tasty beef shank just on its own, it looks excactly like what you made, I can taste it just from looking at it. Thanks for making this recipe and reminding me of home :')

Ooooffff. The memories of cold Taipei evening strolls that either starts or ends with a bowl of beef noodle soup and dumplings from a random side street hole-in-the-wall just came back to me. Damnit I miss Taiwan. That distinct smell from these spices is something you will never forget yeah? What is the exact name of the spice packet, and where in Taipei can you get those? Because once this craziness from COVID-19 is gone I am so going back to Dihua and other Taipei haunts for a much-needed supply run. My mushroom and tea stash is almost gone! D: Thanks!

As a Taiwanese person who grew up with parents who don't cook, I finally tried making beef noodle soup myself this summer! I love looking at people's recipes to hopefully get ideas to create MY perfect beef noodle soup recipe. I usually use carrot instead of apple but maybe I'll like the added sweetness, will try.

Last time I made this I used tomato paste based on seeing various recipes and vids to help with a umami boost. It didn’t taste tomatoey but it’s a good alternative. Also instead of a spice packet I used five spice and some fresh spices that I just strained later 😁 the five spice is great to keep around for stuff like luroufan minced pork rice etc.

ahhhh I’m Taiwanese American and I always miss Taiwanese food so much in the states (tho I don’t miss the mosquitos ugh) was feeling down cause I haven’t been to Taiwan in a hot second, and the COVID issue there has got me a lil’ worried. thanks for your recipe :DD will give it a go

@Kawaii Kat, I disliked it then un-disliked it (Sorry Inga) because it felt cool like I made a difference, since there was no other person who disliked it. Have you ever done that as a kid? You know, when you just click it, then un-click it then click it again etc.? And yes, I do want to eat it so bad, but can't--too full + I live in another country than Inga so... :(

This recipe is awesome! I made it for my Taiwanese husband and he said it was “really good” and ate two bowls of it. The kids also loved it even though it was spicy, they kept coming back to scarf noodles from my bowl 🍲 😂. Thanks for sharing!

This is by far the best noodle soup dish you will have from Taiwan. If you go to the mainland, get it in Fujian province. Minnan cuisine is delicate, simple, and flavorful!

Why am I watching this at 3:15am when it’s way too late at night for making noodle soup?! Might have to make some simplified version for dinner tomorrow though! Simplified because I can’t find everything and don’t have any Asian grocery stores anywhere near me. I’ll have to use Knorr block, a bit of garlic and ginger and maybe tomato to make my soup, and of course scallions

I lived in Taiwan for 20 years and ate tons of beef noodles. I haven't been back there for a few years and I really miss the food, especially beef noodles (I really loved 三商巧福), so I decided I'd try and make some at home. I was searching for videos to make the actual noodles, but you bought them :(

i make beef noodle soup 3/4 days a week. i dont eat it every day but even eating it one or twice a week, im still not sick of it. as for the braised beef... I eat that almost every day, stir fried or in other soups or with fried rice. i could live off of red braised beef shanks

Your beef noodle soup looks so good. I miss Taiwan! When I lived in Taiwan I had to travel back and forth between Taiwan and Japan. The typhoon would come to Taiwan first, then I would fly to Japan and the typhoon would go to Japan. When I got back to Taiwan a new typhoon would come to Taiwan. I was wet and very sad all of typhoon season, but beef noodle soup made me happy! Dao Xiao Mian is my favorite when I'm cold and wet.

Vietnamese has something similar called bun bo hue. well only similar in that both use beef shank. My point is people need to eat more beef shank. It is delicious!

this looks amazing! i would have hammered the 👍 a gazillion times if i could have! i love your cultural context, and the way you bring it home. i cut back on carbs when i can, so i'd prolly put shredded cabbage in there instead of noodles, but i loved seeing the bok choi, which is a good addition. thanks for the secret, homestyle recipe ❣️ i'm going to try it!

I think we do have variant of beef noodle soup here (Sabah, Malaysia). It's called Ngiu Chap. Difference is, we have beef meatballs, beef intestine and all things beef.
