"The Motherland of the Suckling Pig!" Thank you Mikey for making that clear! Lechon Asado (litterally translated means baby piglet roasted) , both Spanish origin words btw, the preparation is known all over the world due to the fact that the Spanish explorers and colonists traveled the world and brought it and the pigs with them on those journeys. Style of cooking varies from place to place due to environment and availabe resources, be it on a spit over a wood or coal fire, in an horno or more modern type oven, buried in the ground on top of hot rocks and under a blanket of banana leaves, seasoned with local indigenous ingredients, just simply with salt or nothing at all, it''s still roasted pork. People from other countries claim theirs is the best and the original but they live in a vacuum and don't know the truth of history. If more people travel like Mikey or use the Internet like those watching his yt channel and if they are open to knowledge, then just maybe they'll learn some truths. Mikey this was another yummilicious food exploration. Thanks for taking us along!
