When I moved to the Tampa Bay Area nearly 20 years, I’d never eaten Cuban food. Now, I live around the corner from a Mom-n-Pop Cuban restaurant that makes amazing sandwiches: classic Cuban, Media Noche, Lechon and Palomilla Steak. Every now and then, my wife’s best friends’ father will make lechon (roasted pork) with the crackling skin (chicharron). Amazing food!

The Cuban sandwich was made for tobacco workers going to work in the cigar factory in the 1040s I believe. It is not from Cuba or Miami. But in a suburb of Tampa called Ybor City. He best place now a days is Pipo on W Hillsborogh avenue in Tampa and the bread Cuban bread is made at a bakery in Ybor City. I have lived in Tennessee a couple years now and I can’t find one up here that even compares to Tampa. So when my kids and grandkids come to visit I make them bring me Cuban bread and my seasoning from Tampa for my roast pork

They need to be cooked in a panini press. Or take a second cast iron or heavy skillet, or you can even use a brick that you have wrapped with foil and heated in the oven, and press those sandwiches. Cuban sandwiches are pressed sandwiches, not just grilled.

nice try but... if you ever make it to Miami try these 3 a Cuban, a media noche, and a Elena ruth. Cuban ham or lechon is made differently, its a slow roasted ham off the pig that's marinated in a citrus sauce called mojo(pronounced moho) that is amazing. i'd bet you could do a reasonable pig in your smoker hint hint
