Lapsi and Suhari is like a sandwich made of roti and a milky, sweet, creamy filling on the inside. It's used as an offering in Hindu prayers to Mother Durga and it's so yummy as well.
This recipe will make exactly 10 pairs of Lapsi and Suhari.
For the Suhari, you'll need:
2 cups flour
2 tablespoon ghee
1 cup water
1/4 cup sugar
1 1/2 cups ghee
For the Lapsi, you'll need:
1 cup flour
1 cup sugar
2 1/2 cups whole milk
1 cup evaporated milk
1 tablespoon ginger
1 teaspoon of cardamom (elychee)
5-6 cloves
2 tablespoon ghee
1 Siliment or West Indian Bay leaf
1 cup of water

+Taste of Trini actually when we make for maa Durga, we throw in some neem leaves as well but not too much to make it bitter. Just like 3 leaves because traditionally, mother Durga likes her offerings with neem leaves but that's just my tradition. Not mandatory. I never really tried the Lapsi with ginger but next prayers, I'll add some in there! We also make some sindur with cornstarch and food colouring so that we can still eat them with the sindur on them.

The sohari is a very very thin roti so it takes seconds in the pot. When u put it in and u see small bubbles then turn quickly for another few seconds. When it's done put in paper towel and cover properly to remain soft

Very interesting. Being an Indian I have never heard about this dish!!!! May be it is a typical North Indian dish. I am also amazed by the number of spices which you used- again, may be unique to West Indian cuisine. In India, spices are restricted only to savory items not much for sweets. Elachi is the only spice used for Indian sweets and of course vannila essence for western desserts like cakes, puddings etc. Raw ginger powder is used only for certain sweets in Kerala. Nutmeg, saffron are sometimes used. Very rarely cloves but never cinnamon or bay leaves.
@TasteofTrini

Wow, really? I guess this is predominantly a West Indian tradition. Yes, I know...I love how the Elychee and cloves taste in savory dishes. I'm glad you told me this, i'm learning a lot about Indian culture and my roots through you. Thanks again :)

I'm not 100% sure but in Trinidad bhojpuri (Ancient bhojpuri) souharee means food offered to God. And the sohari- puris were one of the most famous offerings along with lapsi to goddesses and priests in Trinidad. The puris were served to priests on Calathea lutea leaves as a plate and very quickly, the leaf was called sohari-patti or "leaves associated to sohari-puris" by the bhojpuri speakers. The lapsi is a traditional eastern Indian pudding which is used as an offering in the Bengali Durga puja and in bhojpuri and awadhi goddess worship. The flavourings are personal preference and also tradition. Cloves, elychee and cinnamon are The most used while cilliment leaves and vanilla are indigenous to trini culture.

+outragedlyrics that's interesting! I do believe that North Indian lapsi is made with cracked wheat while the bhojpuri one (maybe East Indian) that is made in Trinidad is made with flour. The same way the Bengali one is made for their Durga puja. And the sohari is a sweet version of puri. Puri is known all over India.
