This is a quick meal that goes really well with coconut rice .... see video also.
Ingredients /
4-6 Carrots
150 gm Fennel
150 gm Peas / Petit Pois
3 Tbs Coconut Oil
Spices ; 1/2 Tsp Coriander Seeds, Cumin Seeds, Cardamon; Garlic
1 Bunch Coriander Leaves
70 ml Vegetable Stock (Use 1 vegetable cube)
1 Cup of Coconut Milk
200 gm Seitan Mince
Method :
Peel, Wash and Slice and Dice the Carrots
Chop the Coriander Leaves
Slice the Fennel into Small Pieces
Melt 3 Tbs of Coconut Oil
Add the Fennel and cook until it starts to brown
Add the Spices half a spoon each of Coriander Seeds, Cumin Seeds, Cardamon, Garlic
Keep stirring the mixture and let it cook for 2-3 minutes
Add the Carrots and keep on stirring
Add the Coriander and stir the mixture as it cooks
Add the Peas and keep cooking
Then lastly add the Seitan Vegan Mince
Let it Cook for about 4-5 minutes
Add the Vegetable Stock and let it simmer and cook
Add half the Coconut Milk, then let it cook for a further 10 minutes.
