Thank you very much for the recipe, looks delicious and simple. 2 questions, please: What is mirin and how can I substitute it, if unable to find in Europe? And what could I use to substitute the sake? We do not consume any alcohol, also not for cooking.

Is the sake normal drinking sake?

Cooking sake will do just fine here, but you can use regular drinking sake, too.

Alcohol will evaporate during cooking so it's not an issue, but you can simply skip adding sake, too. It'll still taste good.
