I made this for dinner tonight based on your recommendation. Delicious! And you were right about the parm - I shredded mine and in hindsight it would have been better to have pulsed it in the blender. Which is what I’ll do next time, as I’ll definitely make this again.

"Dipping Dots, the ice cream of the future" That's great! You have a really great sense of humor. I also really like the way you go into detail when you give cooking instructions. Like looking at the color of garlic and onion. Super helpful for a novice. I just found you and have already binged so many of your videos today. Do you think this could be made without oil?

You should be able to skip the oil as long as your skillet is well-seasoned. The broccoli may not get quite as crispy, but I roast my broccoli without oil and it still gets a little crispy. You could add a little water or lemon juice to prevent sticking while cooking. Same for the garlic and onion -- they should caramelize OK dry, but a small amount of water will help prevent sticking.

Hi, Geoffrey! I watched your video of how you lost 30 pounds in 90 days. Congratulations on your accomplishment and thank you for sharing such wonderful and helpful information for all of us! I am very familiar with Eat to Live and other very similar ways of eating. I don’t have 30 pounds to lose but would love to lose a few pounds of fat that have crept on over the holidays. I notice you only prepped 3 sweet potatoes for the week. Is that all you would eat for the whole week? I typically eat 2-3 sweet potatoes a day and sometimes add beans to my salad and sometimes have a bowl of oatmeal too. All whole food, plant based and low fat. I guess I want to know exactly how much caloric food you would allow yourself per day (sweet potatoes aren’t caloric, but compared to non-starchy veggies - you get what I’m saying). And I don’t hold back with fruit. Did you? Thank you! I like my weight but wouldn’t mind feeling like I can see the scale move if I want it to. I don’t feel that I have that power. I think I’m eating too much for that but am scared of feeling deprived. I guess I should just try to cut back on some of the more caloric foods and see how I tolerate it. When you have time please tell me approximately how much non-starchy food you would typically eat per day. Thank you so much! 😊😊😊

I ordered it from Hedley & Bennett. It’s the same brand the BA test kitchen was using prior to launching their own line of aprons. I like the sturdy fabric and the construction feels really high quality. A bit expensive, but I think worth it!

I have a mesh “cut glove” that I’ve started using for fear of that very thing.
