Made these last week with Sausage, Egg & Cheese completely wrapped. When I brushed on the butter, I sprinkled them with some salt. These are sooo good. We have a rooster that my 15 year old wants to butcher. Not sure if we're going to do rooster noodle soup or chicken broccoli rice & cheese kolaches

Greetings Honza, from Western Washington state USA. 2ND generation American here. Do you know any Bubenovich's? Our Granpaw immigrated from Czechoslovakia, through Elis island as a toddler around 1900. I only remember seeing the great grandparents once. All l remember is they were very old, and spoke a strange language. I believe they were from the Prague area.

@@jankecaldes Thank you for the response! It doesn't surprise me that there are lots. I had 12 aunts and uncles all with the surname or maiden name of Buben. So we have hundreds of cousins all over the U.S. Grampaw settled in West Virginia with his family, and after WW1 he moved to Oklahoma and got married there. 13 kids later, and all the sons served in combat roles in WW2, and Korea. All survived. Several cousins saw combat in Vietnam. One was MIA for about a year and is presumed KIA. I'll have to search West Virginia to see if any Bubens are still there. Back in the 70s, my 2nd oldest brother was spending 2 weeks in an Anchorage Alaska jail on a misdemeanor, and his cellmate was one of several Russians who had jumped ship, seeking asylum. The Russian was friendly and asked Ron, You Czechoslovakian, no? Ron asked, how did you know? And he replied, oh, can tell, can tell. Dobre' zdravi!!

Once I moved from southwest Oklahoma to Florida, I was dismayed to find out that kolaches were not a thing around here. I've tried so many recipes but none of them came close to what I've gotten in Texas or Oklahoma. I'm gonna try this one next and be hopeful that it's closer to what I've had in the past. 🙏

typically in central US, kolach is a somewhat sweet dough with fruit -- but if you use less sugar, and use a sausage filling, you make klobasnjek (phonetically spelled for you). You did very well. R

We went on vacation a couple of years ago to visit family right outside of Lubbock Texas and we stopped at a donut shop their and I seen that they had kolaches on the menu so I ordered them and let me tell you something. I'm from Nebraska a lot of bohemians here and what I got from that shop is nothing what I was raised to be kolaches. I even told the shop that I was going to call my grandma and tell her what you guys down there are doing to kolaches 😂

Most donut shops in Southern Texas have Texas Kolaches (sausage) but you will find the more traditional with the fruit on the way to Central Texas. There's a lot of places like Prasek's in Hillje that make them both ways. If you go to a Shipley's Donuts they will stuff all kinds of meats in them. I've seen a place in Austin use Boudin.

Here in Chicago we have bagel dogs which, as I'm sure you've deduced, are hot dogs wrapped in a bagel dough just like these. They're incredible. I imagine these are so much belter just due to the inherent differences.

Just one important safety tip to add: If you are tasting your sausage before casing, use the cure accelerator OR add the cure after you cook your taste test sample and re-adjust your seasoning. Colon cancer is no fun. Great video as always!
