You have mastered the cook. That scoring proved to really add to that beef. Thx for sharing. I did Lamb in my Ooni Koda 16 and baby back ribs using aluminum foil with a rub and final half hour Of a total of 5 hours at 230 with Sweet Baby Rays. My brother in law almost devoured them all. So homemade pizza, grilled rack of lamb , slab of baby back ribs, and southern potato salad

U shouldn’t have to use anything just the gas assist that’s the whole point of having it
