This is my husband’s fave and I’ve tried and followed quite a few pinterest recipes but couldn’t get the taste quite right so I quit. Then I watched this and inspired me again to make it. It worked!!! I got the taste right!!! Instead of chicken I used beef because that’s what he likes. The asian store that’s near me doesn’t carry the flat wide noodles so I used the pad thai noodles. Still worked. Thank you so much!!!!😍😍😍

Great recipe can’t wait to try. If you substitute arrowroot (tapioca starch) for the cornflour then the recipe is gluten free.

You could use dried wide rice noodles or change the dish a little and use Chinese egg noodes :-)

So wouldn't this dish be traditionally made with yellow bean paste to give the stock the backbone of flavor it needs? I've been working to recreate the magic of my introduction to this dish but no matter what I just can't figure out how to match the depth of flavor. I get close, but something is still missing. The recipe I have deciphered so far is -Wok seared wide rice noodle in black soy sauce. -Beef, Chicken, or Pork. coated with Tapioca flour, oyster sauce, white pepper powder. Seared in pan until almost done. -Broccoli, Carrot, Baby Corn, Cabbage, (Onion?), Garlic seared in pan then deglazed with beef chicken or pork stock matched to your protein of choice. -Thai Basil leaves, Yellow Bean Paste, Fish Sauce, Oyster Sauce, White Pepper Powder, and Palm sugar added to taste. Tapioca Slurry added if needed. -Finish with chili condiment of your choice serve over fried noodle. Compliment with Steamed Jasmine rice. I tried your recipe. I think it is a wonderfully quick iteration of the dish, with easy to prepare and easily accessed ingredients and the recipe is compact and easy to follow. And while it is good, it just seems to be missing some of the things that made one of my first experiences with family recipe Thai cuisine so great. I was just wondering if you have any insight into what might be missing?

Is Sweet Dark Soy Sauce different to Kecap Manis or Dark Soy?

Jarrard Scott Kecap Manis is simply the Indonesian version of sweet dark soy sauce 😊 But regular dark soy sauce is different. That one is thinner and not as thick 👍

November Sky I would probably say to use corn starch dissolved in a little bit of water, wheat flour can also thicken sauces but the way it works is very different because it has to go in at the start which wouldn’t work with the rest of the stir fry

Hi Marion! I remember you from Masterchief and also used to watch you on our sky cooking channel. I tried making this but my noodles got stuck to the pan. Any idea what happened and how can i avoid this?

There are a few things you can do to avoid sticking... make sure the pan is preheated and hot before you add the oil. And perhaps change up your pan. A lot of non-stick pans lose their 'non-stick' after a few years. Or if you're using a seasoned carbon steel wok..make sure you've got the patina well developed to prevent sticking.
