About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. I loved this series! right up there with your video all about Tamarind. Coming from a background with German grandma's I learned to cook and bake the family favorites: lots of meat and potatoes!, so a lot of ingredients that I love so much in Asian cuisines, I'm totally clueless on how to prepare at home. You should definitely keep up these kinds of educational/reference videos! :)

Thank you for making this video... I lived in Issan for 4 years and I have never been able to get my rice to come out just right... thanks for the hot water tip..that seams to have done the trick...

You're right about Japanese short grain rice. Japanese also uses sticky rice to make rice cakes, but not to eat every day. It reminds me that my mother used to use Thai sticky rice to make mochi, Japanese rice cakes, which were so yummy.

Right on! I have always wanted to learn how to cook sticky rice! Whenever I ask the Thai person at a Thai restaurant they make it sound so scary! LOL! But you make it so simple, I will cook me some! Pai, in the Huad video you wash the sticky rice but in this video you don't wash it? I assume washing is a given for this video?

Hi Pai, I have a rice brand that I bought called Three Rings Sweet Rice. Is that the right kind of sticky rice to use for mango sticky rice?

Some biology things to share: The word "sweet" may related to the polysaccharide (a complex structure of carbohydrate). When you chewing the rice for some time and just to swallow the water (but not the rice), you will start to taste some sweetness from the rice, because the water have enzymes to break down polysaccharide to monosaccharide, and we can taste sweet from it. Most of the babies won't swallow the rice immediately is because of it, and their mom struggled usually lol (at least in Hong Kong, as a HKer as I know :P) So maybe sticky rice is sweeter than other regular white rice, so it flaunt on the bag with the word "sweet". btw love to watch Pai's video for so long, and wish for more videos 💪🏻💪🏻💪🏻

I like to watch your cooking's shows, it is easy to follow and simple way to do.In this video you show how to cook the white sticky rice, how about the black glutinous rice?I tried a few time to cook the black sticky rice but it did not turn out right, the rice is not soft.I wish if you could make a video to show us how to cook the black sticky rice.I'm a fan of Thai foods.

Hi daisy, black sticky rice is not something we cook and eat plain because it is quite tough. If think you've eaten black sticky rice plain as a side dish, it's most likely mixed with a lot of white sticky rice. We use it mostly in desserts, especially puddings, because it gets to cook for a long time. I have a couple of recipes for black sticky rice pudding if you wanna check them out :)

Thank you for this video! Now I do have a question regarding the difference of Japanese sweet rice (Koda Farms) vs Thai Sweet Rice. Are they the same product just grown in different countries or are they similar where they can be used interchangeably or completely different? Thank you!

I assume you're talking about mochigome rice? They are different varieties of rice for sure, Japanese one is short grain. But I haven't tried it for myself to know exactly how they differ cooking-wise.

I usually cook my Thai sticky rice in my rice cooker and it turns out the same way and texture as you do it through traditional steaming method!

Hey Pailin, you've missed an important step in preparing Khao Nieu. After we've done steaming, we actually take it out of Huad or any steamer used on to a flat large plate and we spread the rice using a wooden paddle then shape to the Dtit Khao or rice baskets. That way, rice in the stuck in the middle doesn't get too wet.

Interesting, I never do that and I never have any issues with the middle being wet. Perhaps it's not a problem with small amounts?

We do it to release steam. It we place it directly into the dtit khao from the huad, it continues steaming when we close the lid. Just a tip from your Lao neighbour x

Yes, when making sticky rice I do the same. I was taught by my mom to do it like this. And she's not the only one to do it like this. All of her familly/friends do the same.

Very different. Unfortunately not covered in this series as it is not suitable for eating plain as a side dish. It's usually used in recipes, and mostly in desserts and I have a couple of videos for them if you're interested :)

Everything is exactly the same as jasmine rice...just...broken grains! And yes, congee is what it's used for but you could just cook it like normal jasmine rice too.

Malone Diq Correct. But this does not mean other countries don't have their own culture of eating sticky rice. In central Thai cuisine such as Bangkok, sticky rice is mainly used in various types of sweets and desserts.

I think it's common in many parts of South East Asia. We Indonesian also have this type of rice but mostly use it to make something like lemper which is Indonesian equivalent to Zhongzi.
