That knife is an ulu. It's an Alaskan Native (Canadian and Greenlandic natives have similar types of ulus as well) knife. We use them for everything here in Alaska. The cutting board is called a block and bowl.

I recommended the same thing on low carb love's channel when she was assembling salads in jars (with narrow openings too). I guess if you've never canned foods you would not know about the funnel. I haven't done canning in years and gave my equipment to my daughter but I kept the funnel. I love it!

@@debbiepatrick4499 Me too, I find them handy. I don't do to much canning anymore, some times hamburger, and soups and stews. I have a pressure canner and it is nice to have some ready made meals handy.

I have a pressure canner, so I do some hamburger when it is on sale and I don't want to heat up the kitchen in the summer ( tho now days a sale on hamburger is pretty rare. I also can my broths so it doesn't take up room in my freezer. I love my All American pressure canner.

I usually cook my meat and peppers and store it all in one large container and pull from it when ready to cook with the eggs. I like this idea of individual containers also. 😊

Glass jars freeze perfectly fine. I freeze my homemade broth in mason jars.

Good morning! I've been making a form of these for months. I create the protein base and freeze in 1/2 c servings in a muffin pan. When frozen, I transfer to a large freezer bag. I simply have to grab in the morning when I first get up and let them thaw a bit. Toss in a pan to heat through, add an egg I've beaten up in a bowl then top with cheese. I do some with just mushrooms for my husband since he doesn't do veggies. We love them! Creative Blessings!

I don't eat breakfast but that is also a great option for lunch and fast dinners. I am totally going to make some of that and see what I think of it. I might even add three eggs and make it more of a deconstructed omelet.

Great idea! I think I might try adding chopped radish instead of the peppers. Just not a fan of peppers with my eggs. But this has all kinds of variations you could try. Thanks!

I basically make the same thing but whip up the eggs and mix in with all the ingredients and pour in a casserole dish to cook. Done in about 25 minutes then slice and put in snack size ziplock bags and throw in the freezer. I can take one out at night and put in the fridge and it's thawed in the morning. About 45 seconds in the microwave and it's hot. Not as much wasted freezer space and dish washing.

I use a salad shooter to grate my cheese. So much easier and no scratched knuckles. Highly recommend! I only use block hard cheese. No fillers.

Great video! For another variation I use the Jimmy Dean turkey freezer sausage and make one fresh in a cup (sprayed with Pam or buttered first) then microwave for 30 seconds and stir and 30 more seconds and stir - until fully cooked. You can precook the veggies and keep in a container (I do cooked mushrooms also). Great fast lunch too.

I might do this. I do like the little cups where u add an egg or two. But they’re higher in carbs than I prefer. This would be a good alternative.

Love this idea! We don’t eat breakfast, but when we need a quick meal this sounds GREAT! I even shared this with family members. Mason jars rarely crack. I had a regular glass jar (previously was a salsa jar) with turkey broth in it break when I stored it in the freezer. I did leave room at the top. All the mason jars were fine. Also I have frozen broken/scrambled eggs before when prepping for camping. They always seemed fine. 🤷‍♀️ I may even try this with the egg and maybe a tiny bit o cream. 😋

These look delicious! Even for people who are not on low carb, I think these would be a wonderful breakfast- or really for any meal one would like it for. I can think of other variations, not only swapping out ham or bacon for the sausage, or using different colors of bell peppers and onion. but also trying veggies such as mushrooms and asparagus.

This is intriguing. I generally don't eat "breakfast," at least not until 10:30 or 11 AM, but this might make a good "lunch." The most important part to me is getting at least 30-35g of animal protein in any meal, and this looks like it's right there!

To save cost and time, I suggest using a frozen blend of peppers and onions. If you are going to freeze it anyway, just brown the sausage, let it cool, and add the frozen vegetables and grated cheese. Or, if it is going into the refrigerator, add the frozen vegetables to the browned sausage once the sausage is nearly done browning. Let it cool and put into jars (with or without grated cheese, depending on how you want to do the cheese).

@@zwiftrogue3938 Yes, in fact I had the sausage and vegetables mix for breakfast this morning. I just added two eggs and microwaved it. It turned out great. I did cook the sausage and vegetables in an open pan to steam off some of the liquid. You can also cut a corner off a bag of frozen vegetables and microwave it for 1-2 minutes. That will mostly thaw it and you can pour off the liquid.

I'm lazy. I use the Walmart frozen pepper and onion blend. The chunks are a bit bigger, but they still work fine for me. I use multiple meats (generally sausage and bacon), and scramble the eggs. I mix everything together in a big bowl, and then divide between several vacuum sealer bags. Add a handful of shredded cheese, seal, and freeze. If I have time in the morning, I prefer to reheat with hot water, sous vide style.

I would set the jar in a pan of water bring to a boil cook all most healthy ,the microwave does destroy some enzymes and other nutrients

I love the Jimmy Deans but they have gotten so expensive, $3.79 at my local store. This looks like a great replacement! I don't care for a ton of sausage in mine and used to pick out about half of what was in the Jimmy Deans, so this will work out great! Thank you so much!

I like this. I've wanted to like the breakfast egg muffins but just don't prefer them, this option uses similar ingredients but is cooked in a way that the dish isn't so "eggy" like the muffins ... if that makes sense. A lot of words to say thank you , I will give this a try! ;-).

What is the problem with mixing red onion and bell peppers if your on a keto diet?

Peppers and onions are higher in carbs than mushrooms, spinach or asparagus. I still use them in my keto diet, but sparingly. 1 pepper and 1 onion would make 8 or more breakfasts. I mostly use it to add a little flavor or as a garnish.

Glass is perfectly fine in the freezer, just don't fill too full with liquids (e.g., broth) or it will crack as it needs room to expand. This is a good idea. Not sure I'd want them microwaved though.

Hmmm...I was with you until the 'rehydrate in the morning with electrolytes'. I do an Imperial pint of 5% English bitter beer upon wakening and take another two through preparation and eating breakfast, every day except weekends when i substitute it with red wine, Cotes Du Rhone for preference,

Pint regular mouth Wide mouth pints are easier and get a funnel for the jars, which makes putting the food in easier.

I RARELY fill a canning jar, but I still bought a canning jar funnel. So on the rare occasions I do need to fill a canning jar, it all ends up inside of the jar now. I think I paid like $6 on Amazon, and it's worth every penny just to have it on hand.

The jars used to be marketed as canning and freezer jars. They do fine in the freezer, if what's in them isn't all liquid.

Certain jar shapes still are. It's not an issue with the glass, the flat or the ring, but an issue with certain shapes being filled in a way that the fill cannot expand when it freezes without pushing on the jar, which will often crack the jar.

@@Bear-cm1vl Right. I once put some gravy in a canning jar into the freezer, not thinking and overfilled it. It pushed the lid up and blew the flat off. Jar didn't break though. Probably because the flat would have been the most flexible. Never had a problem with foods that contained minimal liquid, like taco meat. I put any leftovers in a jar, into the freezer. When it fills up it's usually another meal.

Hmmm... I like the mason jar idea.. but I do not own a microwave ( yes... dinosaur )- I think it would be placed in a pot with water and cook it in a bath that way... must try this! Thank you! And you are right- I switched when I drank my LMNT... now I drink in the morning - sets the whole day up! YAY!

At least you can take it to work with you if you want ,I do this with my hamburger for dinner at night , it saves me from to go food . I'm a great cook ,make a little beef broth to put over cooked hamburger won't taste funny ,love the breakfast thanks for sharing....good life😊

@@Banana-lk7tf Mine is from pampered chef. It comes with an attached cleaning tool that perfectly fits into the bottom and pushes every bit of garlic out of the holes.

QUESTION: Is there an official name for that black ground meat chopper thing you were using? I've had one for nearly 20 years and absolutely LOVE it, but for the life of me, I can't find an actual name for the thing. The closest I can find is "meat chopper," but that seems kind of generic and vague. I mean, isn't a knife also a meat chopper? Surely the person who invented came up with something better than "meat chopper." Please, if anyone knows what that thing is called, it's been keeping me up nights. Okay, not really, but I'd still really love to know so I can stop calling mine "that meat-masher-upper thing."

I think Annie’s is from Pampered Chef (it looks identical to mine and mine is P.C.) I think it’s called a Mix n Stir
