Cocktail mayonnaise
Hellmanns Mayo 4 tbsp
Ketchup 3 tbsp
Red chilli sauce 2 tbsp
Jalapeno chopped 1 tbsp
Mix all the ingredients and the cocktail mayo is ready.
Mint mayonnaise
Hellmanns Mayo 4 tbsp
Mint chutney 4 tbsp
Mix all the ingredients and the Mint mayo is ready to be served.
Achari mayonnaise
Hellmanns Mayo 4 tbsp
Achar masala 2 tbsp
Mix all the ingredients and the Achari mayo is ready to be served.
Chilli garlic mayonnaise
Hellmanns Mayo 4 tbsp
Red chilli sauce 2 tbsp
Red chilli powder ½ tbsp
Fried garlic chopped 2 tbsp
Mix all the ingredients and the Chilli garlic mayo is ready to be served.
Broccoli Dynamite
Broccoli florets (blanched) 1 cup
Chilli garlic mayonnaise 3 tbsp
Refined flour 2 tbsp
Rice flour 2 tbsp
Cornflour 2 tbsp
Salt ½ tsp
Red chilli powder 1 tsp
Baking powder ¼ tsp
Water as required
Oil 2 tbsp
Garlic chopped 1 tbsp
Sesame seeds 1 tbsp
Oil for frying
Take a bowl, add refined flour, rice flour, cornflour, salt, red chilli powder, salt, water and make a medium thin batter.
Add broccoli in this batter and deep fry them until crisp and golden in colour.
Once done, remove it on a paper towel.
Heat a pan, add oil, chopped garlic and saute them.
Add fried broccoli, soya sauce, chilli sauce, chilli garlic mayonnaise and saute them.
Finish it with sesame seeds and serve hot.
Aloo chaat tarts
Mint mayonnaise 2 tbsp
Potatoes boiled diced ½ cup
Onion chopped 2 tbsp
Ginger chopped 1 tsp
Green chillies chopped ½ tsp
Chaat masala a pinch
Saunth chutney 1 tsp
Red chilli powder ½ tsp
Salt a pinch
Tarts 9-10 pcs
Coriander sprig for garnish
Heat a pan, add oil, add diced boiled potatoes and cook them until it comes crisp.
Transfer it to a bowl, add chopped onion, chopped ginger, chopped green chilli, chaat masala, saunth chutney, red chilli powder, salt and mint mayo.
Mix all the ingredients well.
Now take some tarts and top it with these mixture.
Garnish with some mint mayo and coriander spring.
Achari paneer tikka chaat
Paneer tikka 1 cup
Bread slices 4 pcs
Onion chopped 2 tbsp
Green chillies chopped 1 tsp
Ginger chopped 1 tsp
Coriander chopped 1 tbsp
Achari mayonnaise 3 tbsp
Cheese ½ cup
Butter 2 tbsp
Cut the paneer tikka into small dice and transfer it to a bowl.
Add chopped onion, chopped green chilli, chopped ginger, chopped coriander, achari mayo and mix it. Put this mixture between the bread slices with some grated cheese.
Heat a pan, apply ghee/butter and toast the sandwich.Achari paneer tikka sandwich is ready to serve.
Potato wedges with cocktail mayonnaise
Potato wedges (blanched) 1 cup
Cocktail mayonnaise ½ cup
Refined flour 2 tbsp
Rice flour 2 tbsp
Cornflour 2 tbsp
Salt ½ tsp
Red chilli powder 1 tsp
Baking powder ¼ tsp
Water as required
Chaat masala a pinch
Oil for frying
Take a bowl, add refined flour, rice flour, cornflour, salt, red chilli powder, salt, water and make a medium thin batter.
Add blanched potato wedges in this batter and deep fry them until crisp and golden in colour.
Once done, remove it on a paper towel and sprinkle some chaat masala.
Serve hot with cocktail mayonnaise.
